Vegetarian Recipes for Hot Summer Days. Most everyone has experienced those HOT summer days when it; just too hot to eat just cooked meals and a cool vegetarian recipe would be a perfect meal. . I enjoy summer and prepare and plan my vegetarian recipe for my family and friends that are designed to keep them cool. Cold food also has a benefits for those watching their weight. Did you know that when you eat cool food, your body has to burn calories to warm the food for digestion? Wow, what an added bonus. You can eat cool vegetarian recipes more with less caloric consequence.

Cool salads made from fresh fruits and vegetables, and sandwiches make with eggs, cheese, and plenty of veggies I generally make my summer meals early in the morning and prepare veggies for the next day so they can chill and crisp in the refrigerator I find that with temperatures well above 90 degrees and humidity level between 90-100 percent here on the coast, I am just too tired to "cook" anything at supper time. Therefore, the recipes I am going to give you should keep you out of the kitchen in the heat of the evening, and relaxing while you enjoy a homemade meal already prepared.

If You Have to Cook do it on the Grill

3 Barbeque Recipes - Mouth Watering Meals

Portabella Mushroom Burger

Ingredients

4 medium sized portabella mushrooms

1/2 cup Italian salad dressing

3 round buns

condiments (mustard, catsup. mayonnaise, pickles, onions, cheese or anything else you desire)

Place clean portabella mushrooms into a large zipper bag with Italian salad dressing and marinate at least 1 hour. Place mushrooms onto a medium grill for approximately 3-4 minutes per side. Remove form the grill and place each mushroom on a bun. Serve with the condiments of your choice.

Grilled Pizza

4 pita breads

1/ cup creamy garlic dressing or pizza sauce

1 cup grated mozzarella cheese

1 cup each-sliced mushrooms, green peppers, onions. spinach, olives,

Let each person create their own pizza, by placing topping on to the pita bread, sauce first, veggies and topping with cheese. On a gas barbeque heat to a medium heat on both side of a double grill. WHen grill is warm turn off one side and place pizza on that side. Heat with closed lid until the cheese has melted and start to turn golden. This take approximately 10-20 minute depending on your grill. If you want to use a charcoal grill, move the charcoal to one side after heating the grill, place pizza on rack and close lid until done.

Make Your Own Sub Sandwiches

4 hoagie buns

1/2 cup chopped onions

4 leaves of lettuce

1 cup alfalfa sprouts

1 sliced cucumber

1 green pepper

1 large sliced tomato

4 slices of cheese

1 cup baby spinach

1 small can slice black olives

1. hot banana peppers

Place all of the ingredients on a large platter and let everyone make their own sandwich. Serve with chip of your choice.

Salad-Wash and Crisp Lettuce in a Zipper Bag Over Night

3 Summer Salads

Cauliflower Salad

1 head of cauliflower chopped into small pieces

1 small onion chopped

1 small can chopped olives (black or green)

1 teaspoon sugar or sweetener

bottle of an oil and vinegar salad dressing (Italian, balsamic vinegarette)

Mix all of the ingredients in a bowl and let set in the refrigerator for 1 hour or longer. Serve as a side dish.

Summer Cole Slaw

1/2 head of cabbage chopped into small thin strips

1 large carrot grated

1 small onion grated

1/2 package cherry or grape tomatoes

Dressing

1/4 cup balsamic vinegar

1/4 cup light olive oil

1 teaspoon sugar or sweetener

2 tablespoon mayonnaise

Combine cabbage carrot and onion in a mixing bowl mix. Prepare Dressing by mixing all he ingredients with a fork or whip. Pour the bowl of dressing over the salad ingredients mix well. Pour into a salad bowl and chill for a least 1 hour. Place whole tomatoes on top of the salad and serve,

Cranberry Blue Cheese Salad

1 head of Romaine lettuce cleaned, chopped and crisped

1/2 cup chopped of slivered almonds

1/2 cup chopped dried cranberries

1/4 cup coarsely chopped sweet onion

1/4 cup crumble blue cheese

Layer in a large salad bowl. First the lettuce, top with almonds, cranberries and onions. top with bleu cheese. Serve

Try growing some lettuce, it's easy in these cool recycled pallets hung on a wall.

Cool Dessert to Top off Your Meal

Fresh Fruit Cups

Cut and slice fresh fruit, chill and serve.

Squeeze fresh lemon juice over fruit to prevent browning.Grilled Fruit

Ingredients

1/4 cup agave syrup (honey may be substituted)

3 tablespoons margarine or butter, melted

1/2 teaspoon vanilla extract

1-2 halves of fruit per person, peaches, plums, apricots,or nectarines, halved

Ice cream your choice of flavors (vanilla works well)

Combine agave syrup, margarine and vanilla extract and stir well. Aproximatel half this mixture onto the fruit.

Grill fruit, over a medium barbeque grill 5-6 minutes. The should be golden brown and heated completely. Scoop ice cream into serving bowls top with grille fruit. Spoon the remaining syrup over the top of each serving. Makes approximately 3 servings of syrup

Grilled Bananas

2 bananas cut in half, then cut each half into lengthwise pieces

1/3 cup brown sugar

2 tablespoon margarine or butter

4 8 inch sheets of aluminum foil

Vanilla Ice cream

Optional: add a sprinkle of grated packaged coconut and grill with banana mixture.

Lay 1 half of each half of banana on one aluminum sheet, top with 1/4 of the brown sugar, and 1/4 of the butter of margarine. Fold sides to the middle and fold down tightly, the do the same with each end. Repeat for the other 3 halves of bananas. Place upward onto a medium grill cook for approximately 5 minutes. Scoop ice cream into a dish and pour banana mixture over the top.

      Nothing really in particular. I still try to stick to a well balanced meal in-spite of the weather. They may just be a little lighter during the summer compared to the winter. However, after reading your lens and seeing some of your recipes that may change. I appreciate you sharing these tasty looking recipes.       If it's really hot, I like frozen juices and smoothies. I freeze the banana and fruits for the smoothie. I make a lot of juice and freeze it. Save cleanup and having to juice when it's to hot to do anything.
