Five Delicious Vegetarian Meatball Recipes
Recipes That are Actually Delicious!
Lets face it...vegetarian "meatless" meatballs are not always tasty. In fact, most vegetarian meat dishes I've come across taste similar to cardboard and give me a terrible after taste. It's all I can do just to swallow them down to get the nutrition. Unfortunately, it can often be difficult to find meat-free meals that are both healthy and delicious.
Because of this, I've dedicated a lens to all the yummy vegetarian recipes my friends and I have tasted and loved. Trust me...they do exist!
No, these aren't your grandmother's fatteningly tasty meatball dishes, but they are pretty scrumptious and since they are good for you, there is no guilt in enjoying the taste of these amazing vegetarian meatball recipes.
#1 - Onion Soup Mix Vegetarian Meatballs
I love anything with onion soup.
The secret ingredient of these vegetarian meatballs lies in the Lipton Onion Soup mix used to flavor this delicious recipe. You'll be surprised at the fact that there is no meat involved in this vegetarian meatball dish!
4 eggs, slightly beaten
1 (1 1/4 ounce) envelope Lipton Onion Soup Mix
2 cups grated cheddar cheese
3/4 cup chopped walnuts
1 cup dry Italian style breadcrumbs
2 (1 1/4 ounce) envelopes vegetarian broth
1. Mix all ingredients together in order.
2. Refrigerate for 30 minutes to harden.
3. Form the mix into 1-1/4 inch balls and place on a greased baking sheet.
4. Bake in a 400 degree oven until golden brown, about 20 minutes.
5. You can choose to freeze the meatballs to keep.
6. Place the meatballs in casserole and cover with 2-3 cups boiling water and 2-3 cubes or envelopes vegetarian brown broth.
7. Meatballs should be within 1/2 inch of being covered with liquid.
8. Bake meatballs, covered, at 350 degrees for 1 hour (1-1/2 hrs if meatballs are frozen).
9. Or prepare meatballs in a crockpot on high setting for 1 hour (or 1-1/2 if frozen).

While vegetarian meatballs are easy to prepare, there are a lot of different types of vegetarian meatball dishes you can create. So don't sell yourself short and try only one or two. The best way to decide what your favorite vegetarian meatball recipe is? Make a few varieties!
#2 - Mushroom Soup Vegetarian Meatballs
I love mushrooms.
Using mushroom soup to make vegetarian meatballs gives the recipe a moist and delicious flavor. The consistency of mushroom soup vegetarian meatballs is also similar to that of meat-filled meatballs, making it a more realistic and tasty dish.
1 cup cracker crumbs
1/2 cup cottage cheese
1/2 cup ground nuts
2 eggs, slightly beaten
1 onion, diced & sauteed
Pinch of garlic salt
1 can cream of mushroom soup thinned with 1 can water
Tbsp of vegetable fat
1. Mix cracker crumbs, cottage cheese, ground nuts, eggs, diced and sauteed onions and garlic salt together.
2. Shape mixture into one inch balls.
3. Brown meatballs in vegetable fat in skillet.
4. Place meatballs in loaf pan.
5. Pour thinned soup over meatballs.
6. Bake at 350 degrees for 45 minutes.
#3 - Special K Vegetarian Meatballs
Lots of options for everyone.
One great vegetarian meatball recipes a friend of mine uses involves the ingredient Kellogg's Special K cereal. The cereal works to hold the vegetarian meatballs together and creates a delicious consistency that's much like regular meatballs.
3 eggs, beaten
1/2 tsp. salt
1 cup Special K cereal
3/4 cup grated Cheddar cheese
1/4 cup raw oatmeal (quick)
2 tbsp mushroom soup, cream or milk
1 cup pecan meal
1 clove garlic, minced
1 onion, chopped fine
1. Mix all ingredients and shape into balls.
2. Brown in oil.
3. Simmer in tomato or V-8 juice to cover, 1 tablespoon sugar (or less), 1 teaspoon soy sauce and 1 bay leaf.
4. Simmer medium to low heat for 30-45 minutes.
#4 - Pecan Vegetarian Meatballs
Pecan vegetarian meatballs are a delicious way to make meatless dinner treats. The pecans add a sweet, but nutty flavor to these meatballs that may sound a little strange, but is actually quite appealing when added to a spaghetti sauce or even alone in sandwiches. You have to try these to believe how good they are!
1 (8 oz.) pkg. cream cheese
1 med. onion, chopped
1 c. pecans, chopped
1 1/2 cup soda cracker crumbs (crush crackers) add more if needed
1 1/2 tsp salt (if you used salted crackers)
1. Mix together all ingredients.
2. Form mixture into balls.
3. Brown meatballs in oil.
4. Put meatballs into baking dish and cover with spaghetti sauce.
5. Bake 1/2 hour at 350 degrees.
#5 - Eggplant Vegetarian Meatballs
If you love eggplant, you will drool over these eggplant vegetarian meatballs! These delicious eggplant meatballs have just the right amount of garlic to taste and are anything, but bland. You'll be pleasantly surprised at how tasty these little morsels of meatless delight really are.
2 to 3 tbsp extra virgin olive oil
1 medium onion, diced
1 medium eggplant, unpeeled, cut into 1/4-inch dices
1 1/2 cups walnuts, toasted and coarsely chopped
Fine sea salt and freshly ground black pepper, to taste
2 cups dried bread crumbs
2 large organic eggs, beaten
1/2 cup dairy or vegan Parmesan, grated
1/2 cup grated Pecorino, or vegan cheese
3 garlic cloves, crushed
Zest of 1 lemon
1/4 cup chopped fresh parsley or 1 tablespoon dried
1 tablespoon dried oregano
1/2 cup coarsely chopped basil
vegetable oil spray
1. Preheat the oven to 375 degrees F and lightly oil a baking sheet.
2. Pour 2 tablespoons olive oil in a large skillet and heat.
3. SautÃ© onion on medium-low until translucent, about 5 minutes.
4. Add the eggplant and a sprinkle of salt and sautÃ© until the vegetables are soft, about 8 to 10 minutes.
5. In a large mixing bowl, add eggplant, onion, and walnuts.
6. Transfer a generous cup of the eggplant mixture to the food processor and puree on low.
7. Add the bread crumbs, eggs, Parmesan, Pecorino, garlic, zest, parsley, oregano, basil, 1 teaspoon salt, and black pepper and mix well.
8. Rub a little olive oil on your palms and shape the mixture into meatballs with your hands, using 2 heaping tablespoons of the mixture at a time. Each meatball should be about the size of a golf ball.
9. Place the eggplant meatball on the prepared baking sheet and spray with vegetable oil spray.
10. Bake 25 to 30 minutes, until a deep golden brown with a nice crust.
11. Remove the pan from the oven, cover with foil to slightly steam the meatballs, and allow them to rest for a few minutes.
