I've been a vegetarian for almost 20 years and in that period of time I have heard many misconceptions that people have about vegetarianism. I have found many people to be uncomfortable around vegetarians, not having a clue what to feed one. I have also heard many people express interest in becoming a vegetarian if only they know how to go about it.
Often people expect vegetarians to be satisfied with salads consisting of mainly iceburg lettuce topped with a sprinkling of vegetables. The truth is a healthy vegetarian diet consists of eating dozens of colorful and dark green leafy veggies, plus fruits, nuts, seeds, nut and seed butters, all kinds of beans and whole grains, tofu, and sometimes even eggs and dairy products...the only thing we don't eat is meat!
