Tomato Bread (Pan Con Tomate) - A Real Crowd Pleaser

Easy-to-make, "Bread With Tomato" (aka "Tomato Bread") is simply a toasted slab of bread "rubbed" with fresh garlic and ripe tomato, then drizzled with olive oil and a bit of coarse salt. Some, top it off with cheese.

But know this: It is one the most well-loved and most widely eaten tapas dishes. Once you've tried it, you'll understand why many even eat it for breakfast!

How to Make Tortilla Espanola with Celia Tejada

Garlicky Green Beans (Alubias Verdes con Ajo)

A simple and easy recipe that uses fresh green beans and garlic!

Alubias Verdes con Ajo - Approx six servings

  • 1 pound fresh green beans
  • 4 cloves garlic, minced
  • 1/4 cup extra virgin Spanish olive oil
  • salt to taste

Wash and snip the ends off of the green beans. Steam until cooked (but still very crisp).

Heat olive oil in a large sauté or frying pan. Add minced garlic and sauté on medium heat for approximately 3 minutes (be careful not to burn).

Add green beans and lightly sauté until thoroughly coated well with oil and garlic. Remove from pan to serving dish and salt to taste.

Escalivada

Escalivada is made from roasted (traditionally cooked on a grill) eggplant, peppers, onion, (and sometimes, tomatoes), which is dressed with garlic, salt and olive oil.

How To Prepare?

Clean produce before rubbing with olive oil. Flame grill (or roast in the oven) the eggplant, peppers, onions and tomatoes until soft.

Remove from heat, let cool before peeling and de-stemming the eggplant. Likewise, peel and seed the peppers. Cut the roasted vegetables into strips. Sprinkle with finely chopped garlic and dress with oil and salt before serving.

This is a dish you can prepare days ahead and store in your refrigerator. It's yummy served hot or cold.
