Vegetarian Stuffed Mushrooms Recipe

I have been making vegetarian stuffed mushrooms for a very long time. My fascination with cooking began when I was around 13 and my parents and older sister were the guinea pigs for all of my culinary concoctions.

Since, my sister was a vegetarian, I adapted a lot of recipes to suit her taste as well as mine.

Although I have never personally been a vegetarian, I love great vegetarian recipes just as I enjoy any type of cuisine, provided that it is absolutely delicious :)

I am grown-up now, with my own family and this dish has become a family favorite, as well as a favorite party appetizer.

My sister is now in her 30's and married with two toddlers...and she still makes my vegetarian stuffed mushroom recipe to this day for her family, as well as a few of my other vegetarian recipes that I will save for future lenses.

So here is my original recipe for vegetarian stuffed mushrooms...hope you enjoy them :)

  • Prep time: 15 min
  • Cook time: 30 min
  • Ready in: 45 min
  • Yields: 3-4

Ingredients

  • One small package of white button mushrooms (you can substitute another variety such as cremini if you prefer) Depending on the size of the mushrooms one package should contain approximately 8-10 large mushrooms or more if they are smaller.
  • 1/3 cup of fresh breadcrumbs (you can substitute packaged breadcrumbs if you prefer).
  • 1/3 cup of mayonnaise
  • 1/4 cup of grated parmesan or romano cheese
  • Season to your taste with a dash of your favorite herbs and spices (black pepper-garlic-parsley-basil-parika and oregano all work well)
  • Optional: Top with your favorite melting cheese (mozzarella-cheddar-monterrey jack-muenster-swiss-edam-gouda-etc).

The first step is to clean your mushrooms and remove the stems. Place the mushroom stems in a food-processor or mini-chopper. If you don't have one, you can use a knife to mince the mushroom stems.

Mince the mushroom stems and place in a mixing bowl.

Fresh breadcrumbs really work well with this vegetarian stuffed mushroom recipe. Start by cutting your bread into small cubes and place in your food-processor or mini-chopper. If you are using packaged bread crumbs, you can skip this step.

Pulse the cubes of bread until they are coarse crumbs. If you are using packaged bread crumbs, you can also skip this step.

Combine breadcrumbs and mayonnaise with the grated cheese and minced mushroom stems in a mixing bowl. At this stage, you can also season the mixture according to your taste.

Place your mushroom caps in a shallow baking dish and, with a fork, add the stuffing mixture to the caps gradually until they are all evenly filled.

Once you have finished stuffing the mushroom caps, use the fork to shape the stuffing into a nice rounded shape.

Place in a 350F degree oven and bake for 30 minutes or until the stuffing is a nice golden-brown color.

If you decide you want to top the stuffed mushrooms with cheese, place small slices of cheese on top of each stuffed mushroom and broil for a few minutes or until cheese is melted.

Vegetarian Stuffed Mushroom Recipe - Ethnic Variations

Suggested variations and additions to this delicious vegetarian stuffed mushroom recipe.

Variations can make it fun, help to tailor to individual tastes or put your own spin on it and make it your own recipe.

Here are some of my suggested variations to this vegetarian stuffed mushroom recipe:

Try giving your vegetarian stuffed mushrooms a cultural identity by adding ingredient that are specific to your ethnic background or a specific type of ethnic cuisine you might be pairing the recipe with...try the following suggestions:

Italian: Are you serving your mushrooms with pizza or pasta...try using some Italian ingredients in your vegetarian stuffed mushroom recipe, such as basil, oregano, garlic, pine nuts and crushed red pepper or chopped sun-dried tomatoes, and top with an good Italian melting cheese, like mozzarella, provolone or fontina. You could also add some left-over risotto or even try mixing in some of your favorite Italian sauces like marinara, alfredo or pesto.

Greek: Try some Greek flavors by replacing the grated parmesan with some ingredients like chopped kalamata olives, spinach, feta cheese, garlic, and oregano...this Greek version of the vegetarian stuffed mushroom recipe is great with some lemon squeezed over the top. You could even try to make it moussaka style by mixing in some minced roasted eggplant, chopped potato and some tomato sauce and topping with some creamy bechamel sauce and a sprinkle of romano cheese on top.

Middle-Eastern: For a middle-eastern twist on the vegetarian stuffed mushrooms, try replacing the grated parmesan with some chopped roasted eggplant, chopped parsley and garlic...and mix in some tahina (ground sesame paste) to add a unique nutty flavor. This one is great topped with sesame seeds.

Indian: Give your vegetarian stuffed mushrooms an exotic flavor by introducing some Indian ingredients. Try replacing the grated parmesan with some curry powder and a dash of cream or yogurt.

Chinese: Spice up your vegetarian stuffed mushrooms by replacing the grated parmesan with some Chinese ingredients like soy sauce, chinese five spice blend, or hot mustard sauce and some vegetables like bok choy, cabbage, carrots or bamboo shoots.

Japanese: Make vegetarian stuffed mushrooms fit for a samurai...try replacing the grated parmesan with some wasabi and left-over fried rice.

Thai: Enjoy a tasty Thai variation of the vegetarian stuffed mushroom recipe by replacing the grated parmesan with some spicy sriracha chili sauce, or some of your favorite Thai curry paste and some fresh chopped Thai basil. This one is great topped with crushed peanuts.

Mexican: Take your family on a trip south of the border with this delicious variation of the vegetarian stuffed mushrooms...try replacing the grated parmesan with some chopped jalapenos, serranos or chipotles to give it a kick and mix in some chopped corn and black beans or left-over spanish rice. Give them even more Mexican flavor by adding some chopped cilantro, a dash of cumin and some Mexican Oregano. Top with some lime juice and your favorite queso blanco.

Irish: Enjoy this Irish variation of the vegetarian stuffed mushroom recipe with a pint of your favorite Irish stout or at your next St. Paddy's Day celebration.. Try mixing in some chopped cabbage and green onion or chopped fresh sage and a dash of ale and top it off with some nice Irish cheddar.

      @Gypzeerose: So happy to hear that you enjoyed my recipe!! I think you will like it with parmesan...it seems to work well in stuffings. Cheddar can be good to use as a topping though. Love rosemary too...I have found that rosemary has an affinity for sourdough, so maybe using sourdough breadcrumbs would be a nice compliment :)

      By the way, I made this recipe at home and it was DELICIOUS! I used cheddar and rosemary - the next time I will try the parmesan because the cheddar was too melty. The rosemary was great. Thanks for sharing this!

      Excellent recipe lens - you show me how it is done. :) I really like your step by step approach and that will make it easy for me to try your recipes, which I am going to do. Pinned to my cooking board and sent out by Google plus. I really appreciated how you credited all your photos.For updates you can add the lens love widget in the middle of this lens so that we all have a chance to register our vote, add a bookmarking widget so that others can share this, add a youtube video, maybe use the sidebars to add some more Amazon products - that is about all I would suggest for this excellent lens.
