Veggie Breakfast Spanish Style
Toast with tomato (Tostada con tomate)
Tostada, is popular in the majority of Spain, or at least the parts that I have traveled and mostly served in Cafe/Bars in the morning for breakfast.
The first time I saw it being made was on a construction site in Spain, it seemed bland and strange. The way they scrubbed the toasted baguette with a steak tomato, after dousing it with olive oil then throwing away the best bit of the tomato?
The proof is definitely in the tasting, and down to the combination of the ingredients and its simplicity.
This is fast and meat free meal and in Spain cheap. Garlic can also be added which is how I prefer it.
Throw some other ingredients on it and it becomes a pizza ready for lunch.
