This is a super simple wine cake recipe which is perfect for the cold winter days to turn a bit of cheer and family warmth for its sweetness and the addition of a good wine. It is perfect as a dessert for an evening with friends or simply as an afternoon treat for yourself.

Attention:

Remember to take the butter out of the fridge in order to let it melt.
Cold butter will not be incorporated properly with the wine when you'll try to mix them.

Tools

  • 1 bowl
  • 1 fork
  • 1 mixer / kitchen whisk

Ingredients

  • 40 g - 1.4oz of butter, softened
  • 4 table spoons (45 g / 1.6oz) of flour
  • 1 pack of shortbread
  • 125 g - 4.4oz - 1/2 cup of sugar
  • 20 cl - 6.8us fl oz of a good wine

Preparation of the Red Wine Cake Recipe

  1. Sift flour and sugar together in a bowl.
  2. Add wine then the softened butter and stir it with a kitchen whisk or a mixer until the butter breaks up into small balls.

3. Put the shortbread in a baking dish and prick the dough with a fork. Don't make the border too high, 1 inch is perfectly fine.

4. Pour the mixture prepared earlier in the oven and bake it at 140 °C / 284 ºF for 15 minutes.

If the dough become dark-brown, remove the cake from the oven else you'll bake it too much and it will become rock solid.

Tips:

The cake in the oven will boil (don't be scared). When it stops boiling it will be ready to be taken off the oven.
The cooking time in the oven may vary depending on the type of oven. In an electric ventilated oven you will only need 5 minutes instead of 15.

If the butter separates from the wine immediately after you have put it into the oven, it means that there is a reaction between the two ingredients and the cake is not a success. It may be acid or remains liquid, so you will have to start again making a new one.

You have to use a good red wine to prepare the cake (ex: Merlot - 11%) .
Do not use a cheap wine because the result will not be good. I've tried it and the cake was boiling in the oven as always, but when I took it off it continue to boil for a long time. When I tried to eat it, it was nasty so I highly recommend you to use a good wine.
Depending on the type of wine that you choose, the taste of the cake change. Have fun experimenting with every wine that you want!

Don't leave a tall border else it will burn or fall into the cake. A burned border will be bitter.

The cake doesn't have a long conservation period. It must be eat within 2 days else the butter will be completely separated from the wine and the taste will not be good. You may also have severe stomach ache because of an old cake.

      It does sound like a great recipe. Maybe I can get Chrissy to make it for me. I would have to eat it all or maybe take the rest and share at church with the folks there.

      I suggest you to make one for you and then if you like it, make a huge one or many for the Church. Because they will be finished quickly since the cake is not a layered one. Maybe you can make some with red wine and some with white wine, so everyone can try both. Be careful not to make a tall border, if it is tall it is better to cut it else in the oven it will cook quickly and it will burn. It happens to me often ...

      I really hope that it will turns out great and you will like it. Be careful with the oven, because apparently every oven tends to work in a different way, so it is better to check the cake often. Soon after the wine become a bit more solid, it is time to take off the cake from the oven. Then you need to let it cool a bit and you can enjoy it. Good luck with the cake !       Maybe it will be a bit too sweet for kids even if they usually like sweet things, because there is sugar in the wine and also sugar added in the recipe's ingediens too... I hope this will not prevent you from trying it peachpurple!
