Wine Cake Recipe
This is a super simple wine cake recipe which is perfect for the cold winter days to turn a bit of cheer and family warmth for its sweetness and the addition of a good wine. It is perfect as a dessert for an evening with friends or simply as an afternoon treat for yourself.
Which Type of Filling Do You Prefer?
Remember to take the butter out of the fridge in order to let it melt.
Cold butter will not be incorporated properly with the wine when you'll try to mix them.
Ingredients for the wine cake
- 1 bowl
- 1 fork
- 1 mixer / kitchen whisk
- 40 g - 1.4oz of butter, softened
- 4 table spoons (45 g / 1.6oz) of flour
- 1 pack of shortbread
- 125 g - 4.4oz - 1/2 cup of sugar
- 20 cl - 6.8us fl oz of a good wine
Preparation of the Red Wine Cake Recipe
- Sift flour and sugar together in a bowl.
- Add wine then the softened butter and stir it with a kitchen whisk or a mixer until the butter breaks up into small balls.
3. Put the shortbread in a baking dish and prick the dough with a fork. Don't make the border too high, 1 inch is perfectly fine.
4. Pour the mixture prepared earlier in the oven and bake it at 140 °C / 284 ºF for 15 minutes.
If the dough become dark-brown, remove the cake from the oven else you'll bake it too much and it will become rock solid.
The cake in the oven will boil (don't be scared). When it stops boiling it will be ready to be taken off the oven.
The cooking time in the oven may vary depending on the type of oven. In an electric ventilated oven you will only need 5 minutes instead of 15.
If the butter separates from the wine immediately after you have put it into the oven, it means that there is a reaction between the two ingredients and the cake is not a success. It may be acid or remains liquid, so you will have to start again making a new one.
You have to use a good red wine to prepare the cake (ex: Merlot - 11%) .
Do not use a cheap wine because the result will not be good. I've tried it and the cake was boiling in the oven as always, but when I took it off it continue to boil for a long time. When I tried to eat it, it was nasty so I highly recommend you to use a good wine.
Depending on the type of wine that you choose, the taste of the cake change. Have fun experimenting with every wine that you want!
Don't leave a tall border else it will burn or fall into the cake. A burned border will be bitter.
The cake doesn't have a long conservation period. It must be eat within 2 days else the butter will be completely separated from the wine and the taste will not be good. You may also have severe stomach ache because of an old cake.
