Spaghetti Alla Novelli

This is a delicious version of a main course spaghetti dish which never ceases to please. Your fresh herbs will come alive!!!

You Will Need:

3 medium onions, chopped

1 tablespoon olive oil

8 anchovy fillets, minced

2 tablespoons chopped parsley

1 stalk celery, finely chopped

1 teaspoon rosemary

1 teaspoon sage

1 pound fresh, ripe tomatoes - peeled and cut in pieces

1/2 cup dry white wine

1/2 teaspoon salt

1/4 teaspoon pepper

4 quarts water

1 pound spaghetti of your choice - I use an angel hair

Cheese for grating

Your creation begins:

Brown onions gently in olive oil. Add anchovies, parsley, rosemary, sage and continue browning for five (5) minutes. Add tomatoes and cook for thirty (30) minutes. Add the wine and seasonings. Cook one (1) minute longer and remove from fire.

While the sauce is cooking, put water on and boil, adding salt. When the water is boiling, put in spaghetti and boil about twelve (12) minutes or until cooked. Drain, put on serving plate. Add sauce and sprinkle with the grated cheese.

Serves 4 large or 6 medium portions....

Presto, your meal for tonite! Enjoy.
