Most people think of avocados only in their guacamole, but you can eat them in so many other ways. Avocados contain the highest amount of Vitamin E of any fruits. Avocados are high in oleic acid, lutein, beta-sitosterol, folate and glutathione. Eating avocados can help with many health issues. They've been shown to seek out and destroy oral cancer cells, inhibit the growth of prostate cancer, prevent breast cancer, protect against macular degeneration and cataracts, lower cholesterol, lower your risk for heart disease, protect against strokes and allow for better nutrient absorption. Eat avocados to prevent cancer, protect your eyes and keep your heart healthy!

I used dried white beans and cooked them to use in this recipe. Here is a good resource on how to cook white beans. Cooking from dried beans is much more economical than using canned beans. You also don't run the added risk of anything leaching in to your food from a tin can.
