I love cheese on toast and toasted cheese sandwiches. Recently, I bought myself a Diablo Sandwich Toaster - a well-deserved personal reward for some reason or other that I now forget! After cheese, one of my favorite flavors is mushroom, so it wasn't long before I tried combining the two with my sandwich maker. My recipe is perfect for one toasted sandwich, made in a Diablo.

To make more or larger toasted sandwiches, you simply need to multiply up the amounts. I used cheddar cheese, but you can switch in any cheese of your choice, including soft cheeses like brie. Likewise, with the mushrooms, you can use one variety or, if you prefer, you can use a mixture. Imagine... brie and chestnut mushrooms, stilton and oyster mushrooms...

It's important to fry the mushrooms and scallion quickly on a high heat so the mushrooms don't "sweat". Soggy mushrooms could give you a soggy sandwich! Putting the mushrooms between layers of cheese also helps to prevent the bread getting squidgy.

Buttering the outside of the bread helps the browning and gives a better texture and flavor. You can omit this step if you want to lower the calories a little.

  • 2 slices of bread
  • 2 oz cheddar cheese
  • 2 oz mushrooms
  • 1 scallion (spring onion)
  • butter


  1. Finely chop the scallion (spring onion)
  2. Slice mushrooms
  3. Grate or thinly slice cheese
  4. Spread butter thinly on one side of each slice of bread
  5. Quickly fry scallion and mushrooms, in butter, on a high heat
  6. Place one slice of bread, butter side down, in diablo or sandwich toaster
  7. Cover with half of the cheese
  8. Layer on the mushrooms and scallions
  9. Cover with the rest of the cheese
  10. Add the second slice of bread butter, side up
  11. Close diablo or sandwich toaster
  12. With a Diablo, toast 2 minutes each side
  13. Serve alone or with salad
  14. Enjoy!

I really enjoy using my Diablo. It's a quick and easy way of making toasted sandwiches. I have made savoury sandwiches and sweet sandwiches, and plan to try pies soon. I'm looking forward to using it over the campfire next time I go camping.


I already said that buttering the outside of the bread can help the browning process. It also gives the sandwich a good texture and a nicer flavor.

Tip : When making sweet toasted sandwiches, you can you coconut oil to give a subtle coconut flavour. Yum!

If you don't have much tim to spend in the kitchen, it is worth acquiring a few useful, time-saving utensils for preparing toasted sandwiches and other foods, such as soups.

      I usually make grilled ham, tomato and cheese but I think almost any filling is great for toasted sandwiches, the Diablo sandwich maker sounds great!
