Hello Zucchini Bread Fans!

You will find three recipes for zucchini bread. One recipe is a quickbread; one is a yeast bread and the third is for an easy savory zucchini bread. There is also a video demo and links on the web.

Do you grow these squashes in your garden? I remember the first time I tried planting them. Being an amateur gardener, I ambitiously planted about two dozen zucchini bedding plants. That particular summer was optimal for growing a garden so despite my lack of gardening skills, I ended up with enough zucchinis to feed a developing nation.

I seriously considered marauding the neighborhood at night, surreptitiously dropping zucchinis in every mail box. Of course I would have encountered my neighbors out on the same mission.

If something like this is happening to you, then you can't find enough good zucchini recipes. I know the story only too well.

A Recipe for Zucchini Loaf

This zucchini bread recipe is for a quickbread, meaning it's chemically leavened rather than yeast leavened. It makes two loaves.

Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 1 tsp vanilla
  • 2 cups washed, shredded, unpared zucchini. Pack well.
  • 1 1/2 cups cake and pastry flour
  • 1 cup whole wheat flour
  • 1/2 cup wheat germ
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp nutmeg
  • 1/2 tsp baking powder
  • 1/2 cup chopped nuts

Method

Beat the eggs, oil, sugar, vanilla and zucchini together. Put beaters on low speed and add remaining ingredients to make a thin batter.

Use two loaf pans that you have doubled lined with buttered wax paper. Pour the batter in so the pans are about 2/3 full. Bake at 325 degrees F. for one hour, or until cooked. Turn out on to racks and remove waxed paper. Cool.

These loaves can be frozen if desired.

Recipe for Bread Machine Zucchini Bread

This is for a yeast bread made in the bread machine

Ingredients

  • 3 tbsp milk
  • 1 egg
  • 1 1/2 cup bread flour
  • 1/2 cup whole wheat flour
  • 3 tbsp wheat germ
  • 1 tsp salt
  • 1 tbsp butter or margarine
  • 1 tbsp brown sugar
  • 1 cup shredded zucchini
  • 1 tsp ground coriander
  • 1 1/2 tsp active dry yeast

Method

Place everything in your bread pan. Choose Light Crust Setting and press start. Remove the bread after the baking cycle ends. Cool on cake rack for one hour before serving.

Easy Savoury Zucchini Bread

fast and easy with biscuit mix

Ingredients

  • 1 cup biscuit mix
  • 1 small onion; finely chopped
  • 1/2 tsp salt
  • 1/2 tsp seasoned salt
  • 1/2 tsp oregano
  • 1/2 cup parmesan cheese
  • 1 cup red pepper or Tabasco sauce
  • 2 tbsp parsley; chopped
  • 1 clove garlic; crushed
  • 1/2 cup vegetable oil
  • 4 eggs; slightly beaten
  • 3 cups zucchini; thinly sliced

Method

Mix everything together. Add the zucchini only after other ingredients are mixed well. Bake at 350 degrees F for 25 minutes in a greased 13x9x2-inch pan.

This recipe for zucchini bread is delicious with a good soup.

      This is a good time of year to make zucchini bread -- I quickly become tired of stir-fried zucchini, and our neighbors just gave us another couple from their garden. I think I'll try your zucchini quickbread recipe soon!

      I found a cookbook today at Kroger grocery store for $13..

      It's by Williams-Sonoma "Bread" and has a zucchini bread, crumb topped blueberry muffins & the orange-cranberry scones that look like Starbucks. I plan on trying out the zucchini this weekend (6/13/09) I'll let you know how it is. Recipe for sweet potato cornbread. I'm getting hungry!

      Thanks for the great recipes. I love zucchini bread.And my neighbor is giving me plenty of zucchinis these days, so I don't even have to grow it. I also make soups and put zucchinis in it.
