Do you grow these squashes in your garden? I remember the first time I tried planting them. Being an amateur gardener, I ambitiously planted about two dozen zucchini bedding plants. That particular summer was optimal for growing a garden so despite my lack of gardening skills, I ended up with enough zucchinis to feed a developing nation.
I seriously considered marauding the neighborhood at night, surreptitiously dropping zucchinis in every mail box. Of course I would have encountered my neighbors out on the same mission.

A Recipe for Zucchini Loaf
This zucchini bread recipe is for a quickbread, meaning it's chemically leavened rather than yeast leavened. It makes two loaves.
- 3 eggs
- 1 cup oil
- 2 cups sugar
- 1 tsp vanilla
- 2 cups washed, shredded, unpared zucchini. Pack well.
- 1 1/2 cups cake and pastry flour
- 1 cup whole wheat flour
- 1/2 cup wheat germ
- 1 tsp salt
- 1 tsp baking soda
- 2 tsp nutmeg
- 1/2 tsp baking powder
- 1/2 cup chopped nuts
Beat the eggs, oil, sugar, vanilla and zucchini together. Put beaters on low speed and add remaining ingredients to make a thin batter.
Use two loaf pans that you have doubled lined with buttered wax paper. Pour the batter in so the pans are about 2/3 full. Bake at 325 degrees F. for one hour, or until cooked. Turn out on to racks and remove waxed paper. Cool.
These loaves can be frozen if desired.

Recipe for Bread Machine Zucchini Bread
This is for a yeast bread made in the bread machine
- 3 tbsp milk
- 1 egg
- 1 1/2 cup bread flour
- 1/2 cup whole wheat flour
- 3 tbsp wheat germ
- 1 tsp salt
- 1 tbsp butter or margarine
- 1 tbsp brown sugar
- 1 cup shredded zucchini
- 1 tsp ground coriander
- 1 1/2 tsp active dry yeast
Place everything in your bread pan. Choose Light Crust Setting and press start. Remove the bread after the baking cycle ends. Cool on cake rack for one hour before serving.
Easy Savoury Zucchini Bread
fast and easy with biscuit mix
- 1 cup biscuit mix
- 1 small onion; finely chopped
- 1/2 tsp salt
- 1/2 tsp seasoned salt
- 1/2 tsp oregano
- 1/2 cup parmesan cheese
- 1 cup red pepper or Tabasco sauce
- 2 tbsp parsley; chopped
- 1 clove garlic; crushed
- 1/2 cup vegetable oil
- 4 eggs; slightly beaten
- 3 cups zucchini; thinly sliced
Mix everything together. Add the zucchini only after other ingredients are mixed well. Bake at 350 degrees F for 25 minutes in a greased 13x9x2-inch pan.
This recipe for zucchini bread is delicious with a good soup.
