   Hi,
   
   I have a few people coming over for New Years dinner. One or two of them are vegetarian...
   
   and another guest loves fruit. I wanted to have a choice of starter ; one of them with fruit as the main focus but I also wanted to try and do something a bit different as well for my guests. I'm not experienced really in catering for a lot of people so the simpler the better, but any suggestions for a fruit starter are warmly welcome.

   A nice fruit tray would be great.  You could even try to do a home made version of the fruit bouquets.
   
   For a main course, a really hearty lentil soup/stew with fresh country bread.  Lentil soup will satisfy even meat eaters LOL
   
   Crisp salad and perhaps another warm veggie dish would round out your meal.
   
   Hope it all goes well.  You are a good friend for trying to find foods that ALL of your guests will enjoy.

   Fruit:
   
   A big bowl of mixed fresh fruit chunks with honey and lime juice drizzled over it.
   
   Or try...
   
   Fresh fruit chunks on skewers or picks, with a dip made from 1 package of cream cheese, and 1 single serving of vanilla yogurt mixed together (you can also use fat free yogurt mixed with fat free cream cheese!)
   
   Vegetarian:
   
   Roasted vegetable spread. Take combination of any vegetables (onions, tomatoes, peppers, mushrooms, carrots, eggplant, zucchini, yellow squash, turnips, radishes... any kind) Cut into bite size pieces, place in a ziplock bag, add basil, oregano, salt pepper, chopped garlic (or garlic powder), a splash of balsamic vinegar (optional), and a splash of olive or vegetable oil. Shake up bag to coat vegis, then spread on a lightly oiled baking sheet. Bake at 400 degrees for 20 minutes. Allow to cool, then place in food processor or blender and puree, but not liquify. Serve with toasted bread slices, crackers, or chips that are vegetarian friendly.

   Hello.
   
   Well the idea of a fruit tray is lovely, and it is easy to do. But you could also try a simple fruit cocktail like the more well known prawn cocktail. You choose a selection of fruit, say grapes, melon, possibly tropical fruits like mangoes, strawberries, then, mix in some nice fruity cheese, some nice simple vegetables likes green peas or sweet corn and mix it all together. It looks lovely, especially if you dish it out into large wine glasses. The colours will look very attractive and it will be a really good starter.
