Mostly all the food was digested, we are not bloated, we urinated and our system is relatively ready to start a new day.

I think it has to do with the fact that our fluid levels are very low in the morning. As we progress through the day the body stores and uses the fluid we take in before passing it out. Excess fluid/water in the body can make us quite a bit heavier and make us feel very bloated.

It has something to do with water retention in your stomach fat. If you slept vertically the same would not be true. In addition, most of the population eats at regular intervals(normally 4 hours) and when you sleep your body will be looking to your stomach for carbs to burn at that 4 hour mark. If you don't eat anything 3 hours before retiring at night, you will burn more fat because your stomach is empty. The body's immediate response is to burn fat stores, so, you lose weight. This may also be a contributing factor.

When you are lying down your lymph glands are better able to filter the fluids in your body, especially the fluids you are retaining.  Have you ever noticed that when you lie down you have to get up and go to the washroom within 20 minutes or so when you go to bed at night?

Also, lying in a horizontal position, allows for better circulation in your body, because your feet are approximately the same level as your heart.  This too makes it easier on your body to eliminate excess fluid you might be retaining.  All this excess fluid makes us look and feel fatter during the day.

Lastly, when we sleep at night we are "fasting" in that we do not eat food until we get up in the morning.  So when we wake up,our stomachs are empty (as monisajda mentioned) making our tummies look flat.

Aside from the fluid retention already mentioned, also remember that in the morning you are taller than the rest of the day. Lying down allows your spinal column to decompress and when you wake up you may have gained a 1/2 inch or so. This will make you seem thinner. Of course, you lose it pretty quickly after walking around a bit.
