    Do you have any suggestions for easy 20 minute vegetarian  main courses?

    I'm looking for easy meals to feed my vegetarian family after a hard day at work. Any suggestions?

    I have a rice cooker and I put rice in the bottom and put frozen/fresh stir fry vegetables in the steamer basket on top to steam.  The most easy vegetarian meal ever. 

    We also do veggie fajitas a lot.  Chop up whatever fresh veggies of your choice we use squash, broccoli, a variety of peppers, onions, and garlic- you can add tofu also if you want more protein.  Saute everything in a large skillet or wok with a tablespoon of extra virgin olive oil. For a slightly different taste you can use a bit of extra virgin coconut oil as well.  As it cooks add a splash of soy sauce or salsa whatever you like for increased flavor.    Serve with warmed tortillas and top with guacamole or salsa, some soy cheese (or regular cheese if you prefer) and voila 10-15 minute excellent dinner smile

    To make meal prep easier throughout the week I often chop my vegetables a few days in advance and store them in an airtight container in the fridge.

    What a great question. I'll be following this to get ideas for my family too. We make many quick pasta dishes, but the easiest is Spinach with Orzo.

    Spinach with Orzo:
    Boil a big pot of water, add one box of organic, frozen chopped spinach. Add salt and pepper to taste. After spinach breaks up, add 1 lb. orzo pasta. When pasta is done cooking, serve with pecorino romano grated cheese sprinkled on top. Note: it's best to serve almost like a soup consistency. Just add water if there isn't enough left to serve wet.

    Couldn't be easier to make and nutritious as well. All of my kids enjoy this meal!

    Those are both great suggestions ChristinS and Melis Ann. Pasta and rice are both good bases for quick meals, and both your recipes sound nice and healthy using fresh veggies.
