Dukan Diet Recipes - Chicken and Poultry
The Dukan Diet was one of the most popular diet and lifestyle plans of 2010 and as it says on the cover "Five million French People can't be wrong". With the North American launch in April it looks as if this populatarity will be continuing in 2011.
This Dukan Diet Recipes - Poultry hub is one of my five Dukan Diet Recipes hubs.
Dukan Diet Recipes is the capstone hub in which you will find all of the recipes listed.

My personal preference as far as poultry is concerned is chicken so all the recipes I've listed are for chicken. The recipes of course can easily be adapted by just swapping the meat you are using. Some of the recipes could also be adapted for use with meat or fish and certain types of seafood.
Don't forget that goose and duck are not allowed in the first phases of the Dukan Diet and all skin should be removed before eating.
Remember boredom is the enemy of all dieters but hopefully the recipes I've provided will help just a little.

This hub is written to provide recipes for the Dukan Diet to help anyone on the diet or who is thinking about starting Dr Pierre Dukan's highly successful weight loss formula the Dukan Diet. This diet is based around the principles of eating a diet which is low in carbohydrate but high in protein.

Piri Piri Chicken
4 skinless chicken breast fillets or 8 skinless chicken drumsticks
Juice of half a lemon
Juice of half a lime
2 cloves garlic, finely chopped
2 teaspoons crushed chillies
1 teaspoon paprika
1 teaspoon oregano
¼ cup cider vinegar
Sea salt and black pepper
Make a marinade by mixing the chillies, garlic, lemon juice, paprika, oregano and vinegar in a bowl.
Place the chicken pieces in the marinade and ensure that each piece is fully coated.
Cover the bowl with cling flim and place in the refridgerator overnight.
Remove the chicken piece from the marinade and season with sea salt and fresh ground black pepper.
Grill on a medium heat until cooked thoroughly.
To serve squeeze the lime juice over the chicken pieces and serve with plain yoghurt.
4 chicken breast fillets
2 small containers of non-fat yogurt
2 tbsp Tandoori masala spice mix
3 crushed garlic cloves,
1" cube of ginger,finely chopped
2 green chilies, crushed
Salt and black pepper
Using a pestle and mortar mix the salt, pepper, spice mix, garlic, ginger and chillies into a smooth paste with the lemon juice.
Place the yoghurt in a bowl and stir in the paste.
Add the chicken pieces to the bowl and coat with the mixture.
Cover the bowl with cling film and place in the refridgerator overnight.
Bake in a moderate oven until cooked through.
Finish by browning off under the grill.
Dukan Diet Recipes - Tandoori Chicken with Green Beans
Tandoori Chicken with Green Beans
As a variation of the above recipe on the days when vegetables can be eaten follow the recipe above through theovernight marinade stage except instead of keeping the chicken breasts whole cut them into cubes.
Dry fry the chicken pieces in a frying pan and finish the dish by adding green beans.
This is another variation along a similiar theme except the marinade is slightly different. You replace the lemon juice and spice mix with cinnamon, cayenne pepper, cloves, coriander seeds and chopped fresh mint.
After marinading dry fry 2 sliced onions, add the chicken pieces and marinade with a little water and simmer until cooked throughly. If on a protein only day omit the onions.
Dukan Diet Recipes - Chicken Drumsticks
Chicken with Mustard and Thyme
This is a simple but tasty and effective recipe.
Coat skinless chicken thighs or drumsticks with Dijon mustard and thyme and a little sea salt and freshly ground black pepper. Encase the chicken pieces loosely in a foil envelope and bake in a medium oven until cooked thoroughly.
Blend a couple of cups full of cooked chicken with some fresh herbs, a couple of tablespoons of 0% cottage cheese, 1 egg and salt and pepper to taste.
Spoon mixture into muffin tins and bake at 180C for about 15 - 20 mins.
Chill and serve.
Ham and Chicken Cheesy Garlic Pockets
With carefully chosen vegetables to compliment, this is a recipe you can use to entertain your friends without them ever knowing you are on a diet.
(Serves 4 )
8 tablespoons of 0% Cream cheese
4 Chicken breasts
4 thin lean slices of ham
Garlic powder, sea salt and freshly ground pepper to taste
Pre-heat your oven to 180C.
Create a pocket in each chicken breasts by slicing along the middle taking not to cut all the way through though.
Sprinkle some sea salt, freshly ground black pepper and garlic powder inside each pocket
Place 1 or 2 tablespoons of cream cheese into each pocket.
Wrap the chicken piece with the ham making sure the pocket opening is covered.
Wrap each chicken piece in foil and bake in a moderate oven for about 30 minutes.
Unwrap and finish under the grill.
Spicy Chicken and Veg Skewers
You will need 8 skewers
8 skinless chicken breast fillets
4 medium sized red onions
3 peppers (any color)
2 medium zucchini (courgettes)
Finely chopped chilli
Cut the chicken, peppers, zucchini (courgettes) into chunks.
Place in a bowl and sprinkle with the chilli and cayenne pepper.
Cut the red onions into quarters,
Then carefully assemble your skewers with a different ingredient each time until full.
Cook under a moderate grill until cooked thoroughly, turning regularly to cook evenly.
Serve with a green salad and plain fat free yoghurt and enjoy!
Tasty Chicken Burgers
2lbs minced chicken - no skin
1 large onion coarsely grated
1 clove garlic finely chopped
2 teaspoon oregano
2 teaspoon dried basil
Sea salt and freshly ground black pepper
Plain fat free yoghurt to serve
Place the minced chicken in a bowl together with the coarsely grated onion and finely chopped garlic, add the salt, pepper and both herbs.
Mix until all the ingredients are evenly distributed.
Beat the eggs in another bowl and then add them to the other ingredients and stir the eggs into the mixture thoroughly.
Make your burgers by taking a handful of the mixture, roll it into a ball in the palm of your hand, and squash it flat to make a burger about 2cm thick.
Grill the burgers or fry in a non stick frying pan making sure that they are cooked all the way through and serve with plain yoghurt.
If you don't need to feed four people reduce the quantities of the ingredients or freeze the excess uncooked. Don't forget to defrost the burgers thoroughly before cooking.
