There is much more to cauliflower - than just the color while. Orange cauliflower is also available and has been found to be far more nutritious than white - with the added bonus of improving our skin.

Why is Orange Cauliflower Healthier Than White Cauliflower?

It has 25 times more vitamin A than white cauliflower. This is because of the extra beta-carotene, a powerful antioxidant, that gives it the orange color. Carotene is the pigment in orange foods - this includes pumpkins, sweet potatoes, carrots and apricots.

How Does Orange Cauliflower Improve Skin?

Carotene has been proven to protect the skin not only from sun damage but helps to prevent wrinkles and roughness as well. What better way to improve our skin than by eating the right foods.

Why is It Orange in the First Place?

It was discovered this way in a Canadian marsh in 1970. Soon Cornell University created more by crossbreeding them with white cauliflower. Orange cauliflower ranges in color from a pale coral to a brilliant orange.

Does Orange Cauliflower Taste the Same as White Cauliflower?

Orange cauliflower has a slightly sweeter taste. It is also much creamier.

What Are Some Ways to Prepare Orange Cauliflower?

My experience with white cauliflower has been raw in salads, pickled and most enjoyably - deep fried. I've also enjoyed eating cauliflower in Indian dishes. Orange cauliflower can be prepared the same way to enjoy its healthy benefits. There are of course many other ways to prepare it such as:

- because orange cauliflower has a creamy texture it can easily be added to mashed potatoes

- the creamy texture also makes it ideal to use in creamy soups if you would like to avoid using dairy as the cream base

- use it as part of your roasted vegetable dishes

- bake it in casseroles

Note: Steaming is the preferred method of cooking cauliflower because it preserves more of the nutrients.

What Nutrients?

Cauliflower contains calcium, potassium, selenium and vitamin C. It is also low in carbohydrates and fat, and is high in folate and water content.

Nutrition Found in Cauliflower Also Includes the Following Healthy Benefits:

- Cauliflower contains Indole-3 carbinol which is a natural chemical that enhances the repair of our DNA. It is also an estrogen antagonist that works to slow the growth of cancer cells.

- Cauliflower also contains sulforaphane - a compound that may also protect against cancer.

- Another reported healthy benefit of cauliflower is the reduced risk of prostate cancer.

- As mentioned above, orange cauliflower protects our skin from sun damage.

What is Cauliflower Anyway?

It is a member of the Brassica family. This also includes cabbage, Brussels sprouts, broccoli, kale and collard greens.

Where Can I Purchase Orange Cauliflower?

Farmer's Markets here in Brooklyn, New York sell orange cauliflower. It is probably available at such markets in other states. Peak seasons here in New York City are from mid-August to late November. In California orange cauliflower is sold year-round.

Orange cauliflower is also sold in seed catalogs and through other online sources. Look for "Orange Bouquet" and "Cheddar" cultivars.

History Note:

Cauliflower has been eaten for its healthy benefits for centuries. The first reliable source of information is found in writings from Arab Muslim scientists as early as the 12th century.
