Scallops and Tacos/Pork suitable for Dukan Diet Too!
Scallops Succulent and Sweet
Special Food for Special People....You!
Here are two dishes that look and taste great. They are also suitable for Dukan Dieters!
Scallops are very expensive in the desert Southwest. So, when the local store had a special, we splurged and purchased a half a pound of the scallops. These were the giant succulent scallops and we prefer the larger scallops. We also served this with some chilled shrimp and this made the meal heartier for the big eaters.
Pork may be found here as bred (as well as trimmed) to be low fat. One of the tricks that you may use with cooking pork or any meat that may be higher fat is to cook it a day ahead and after the broth has sat in the refrigerator overnight, scrape off any fat that solidified on top. I do that with most of my meat cooked foods. That way I am assured the dish is as low fat as possible.

Ingredients for the Scallops

Preparing the scallops
Pre-heat skillet to high (reduce to medium high when cooking begins)
6 scallops (about one half pound)
2 slices Canadian bacon or other low fat ham, julienne sliced
2 cloves garlic, minced
1/4 C. lemon juice
Make sure the scallops are patted nice and dry. Do remove the tough part on the side of the scallop.
Julienne chop up the low fat Canadian Bacon or ham. Chop up the garlic.
In a pan sprayed with cooking oil saute the Canadian Bacon and then add the garlic. Cook until the garlic is transparent. Remember to lower the stove top to medium from the pre-heat high.
Add the scallops. Once they are done on side one, they will release from the pan. This may only take a couple of minutes so stay by the skillet! Turn the scallops and add the lemon juice. Cover with a pan to finish the cooking.
Remove and serve immediately.

Taco Pork Strips
This is so amazingly easy!
Two center cut well trimmed pork cutlets, trimmed again and sliced
5-6 six mushrooms, sliced
1 package of Taco Seasoning
4 C. low fat chicken broth (I make my own but you can use store bought)
Place in the slow cooker. Whisk the taco seasoning in the broth. Add the sliced mushrooms. Add the sliced pork.
Set the cooker to high. Once it is boiling, turn it to low and let cook until the pork is completely done. Follow instructions on the slow cooker to determine this.
You may want to serve some Tabasco sauce with this but you should not need anymore salt or pepper as both are in the prepared Taco Seasonings.
This is an easy family meal. It can also be made faster in a Dutch Oven on top of the stove. If I were to make it in a Dutch oven I would brown the pork first.
For Dukan dieters, just eat the pork dish and add a salad if you are on a veg/protein day. I make myself a five veg. salad and use salsa as my dressing. This is a very satisfying New Mexico meal!
You can serve with tortillas to family and friends.
