Vegan Muffin Recipes

There are plenty of vegan muffin recipes out there, but my favorite has got to be my vegan blueberry muffin recipe. This brilliant vegan variation of the traditional blueberry muffin recipe is tasty, healthy and easy to make.

I will be putting up plenty more vegan muffin recipes in the near future, on hubpages and on my vegan recipes website!

This tasty blueberry vegan muffin recipe as a great solution for any vegan party, you can cook up a nice batch of these vegan muffins for any occasion!

So lets go over my favorite vegan muffin recipe!

Vegan Blueberry Muffin Ingredients

  • Two Cups of Flour (Might Need Self Raising)
  • 1/3 Cup of Sugar
  • 2 tsp of baking powder
  • A Pinch of Salt
  • One Cup of Soy Milk
  • 1/4 Cup of a Vegan Margarine
  • Egg Replacer (Enough for one egg)
  • 1 tsp of Lemon Juice
  • One Cup of Blueberries

How to Make Vegan Blueberry Muffins

Making your very own vegan blueberry muffins is easy with these simple instructions.

First switch your oven on to 400 degrees, you should also grease your pan before you start.

When you are mixing together your vegan muffin ingredients you will need to use the muffin mixing method. This works by mixing the dry and wet ingredients separately, and then combining them.

To make your vegan muffins, you will need to,

Take out a large mixing bowl and add the flour, sugar, baking powder, and the salt. mix it all together thoroughly.

In a separate bowl mix together the soy milk, vegan margarine, egg replacer and lemon juice.

Mix together the two bowls to create your basic muffin mix, mix it well!

As you are mixing, slowly add the blueberries and mix them carefully in to your vegan muffin mix.

After your blueberries are mixed in to your vegan muffin mix, spoon the content in to your muffin pan, each muffin 'cup' should be around two thirds full.

When your vegan muffin mix is ready put the tray in to the pan and cook for around 20 to 25 minutes, until your vegan muffins are golden brown.

When your blueberry vegan muffins are ready you can sit back and enjoy your tasty vegan muffins!

      @Debby, Your own personal opinion is to change a vegan recipe into something that is completely omnivorous. You should probably find another recipe

      oy veh. I don't think I would make this recipe. My own personal opinion.

      1. do not use self-rising. Prefer whole wheat with non-aluminum baking soda

      2. use little sugar and substitute something natural like honey, molasses, maple syrup

      3. No soy, due to phyto-estrogens. Use rice milk or unpasteurized milk.

      4. No margerine for me. Nothing that hardens fats or uses hydrogenation. Only butter or olive oil

      5. Eggs - love natural fresh eggs straight from chicken

      6. Blueberries and Lemon-- yippee! Good!

      New to the hub. Thanks for the recipe. Blueberries have great Cancer fighting properties. I am trying to grow my own this season.
