If you are diabetic, the top foods to eliminate--as much as you can stand, anyway--are wheat and any form of sugar. Next on the list are most other grains. Modern wheat has a higher glycemic index than sugar. Eat lots of natural fats to replace the carbs: butter, olive oil, coconut oil, grapeseed oil, etc. Get the artifial fats and oil out of your diet ENTIRELY! There is some evidence that it is the artificial fats that are glopping up your insulin receptors. So you eat your stir-fry dishes without rice, which is yummy, and eat mostly proteins and veggies, and some fruits. This more or less a "paleo" diet.
We are not adapted to eat large amount of carbohydrates, plus modern wheat has a much higher glycemic index than stone-age wheat. Many of our modern grains are now GMO, and we don't know the long-term effects of eating this stuff. We DO know that diabetes has gone from being a rare disease to being an epidemic disease. There is something seriously wrong with the modern diet--and most likely modern food in general.
Since I'm diabetic, myself, I know that the carb cravings can be intense, and most of us are not going to be perfect when it comes to skipping the ice cream and resisting the artisan bread, or indulging when eating out. All you can do is your best!
