Soups are good for the mind

Nothing is so warming and comforting as a steaming bowl of filling home-made soup to stave off hunger, especially on a cold winter’s evening. The wonderfully appetizing aroma is always especially welcoming. The mind becomes refreshed and gives a sense of positiveness in life.

Broccoli and Almond soup Serves 4-6

50g/2oz ground almonds, 670 gms broccoli, 900 ml vegetable stock (water can be also be used) , 300 ml skimmed milk, salt and freshly ground pepper black.

Preheat the overn to 180 deg C. Spread the ground almonds on a baking sheet and toast in the oven for about 5-10 mins until golden. Keep aside one quarter of the almonds and set aside to garnish the finished dish.

Cut the broccoli into small florets and steam for about 5 mins until tender. Place the remaining toasted almonds, broccoli, stock or water and milk in a blender and blend until smooth. Season with salt and pepper. Reheat the soup and serve sprinkled with the reserved toasted almonds
