South Africa is a multicultural country, a melting pot for many cultures.

Old recipes from various parts of the world have been brought and preserved on the farms that most of South Africans lived not so long ago.

Food used to be all home made from the farm's products. Nowadays people go out quite a lot, but restaurant cooking is still judged for the freshly made food from fresh and locally grown/ prepared ingredients. I discovered this balsamic glaze in a coffee shop in a nearby town -- it is hugely popular for its lunch menu and businesses have functions organized there for the food it can cater. Well, their main secret is the gourmet balsamic vinegar dressing recipe that comes from a grandmother of the owner -- it gives the special touch to its roasted meats and salads.

But we eat most of the times at home -- so why not use the same secrets as a successful restaurant -- if it is easy?

To use a healthy home made dressing recipe is very easy. Even for those who do not cook very often, or let me say for those especially, having a tasty, healthy, home made, dressing or sauce, easy-to-make, that can be used to add flavor to any food is almost a must. Most people rely on dressings, sauces or marinades from the supermarket in order to add it to their salads or various other food. Some people use the little packs of dressings that come together with the take away meat or vegetables or sandwiches. According to the dieticians, a home made dressing or sauce, made of natural ingredients is a better choice for consumption at any occasion.

Everyone who cares about health and well being should explore the possibility of making this healthy vinaigrette home made dressing recipe.

"Eating is not only a necessity but also an occasion to enjoy" -- choosing healthy food can also mean choosing tasty food.. .

Self made dressings can be added to salads, sandwiches, roasted meat and vegetables

South Africans who have a preference for a vegan diet are in a great number. They use this vinaigrette dressing recipe with their dishes based on vegetables, adding an extra flavour to them..

The balsamic vinegar and olive oil - ingredients for health and indeed a gourmet addition in this form of vinaigrette dressing r

It is one secret well known to some that olive oil and balsamic vinegar are the basic ingredients of the most wonderful dressings that chefs use to set their range of food apart and build up a well liked brand in a field where competition is stiff. The dressings and sauces that make the big difference between one dish and another are sometimes very simple to make. Maybe that is why their importance is overlooked by those who are more familiar with eating than with the cooking. The health qualities of the balsamic vinegar have yet to be well known but olive oil has been discovered in a long while by now. South African recipes are frequently using the balsamic vinegar and olive oil as they are well known healthy ingredients to many easy gourmet dressing recipes.

A gourmet easy dressing recipe to complement any meat, from beef to chicken, lamb or fish or all vegetables and vegan dishes.

the gourmet vinaigrette dressing must be kept in a dark or a non transparent bottle --for a vegan diet it can become a frequent flavor enhancer

According to this easy gourmet dressing recipe, balsamic vinegar and olive oil are boilt together into a gourmet vinaigrette reduction and stored in a bottle. In a vegan menu it could become a basic addition to various dishes.

Reduction is the process through which the quantity is reduced and the balsmaic vinegar gets more concentrated.

For people with no problem of weight control, a small amount of sugar can be added. The Balsamic vinegar has its own natural sugar though, so it is a matter of choice and not necessity. Try this vinaigrette dressing recipe to give new flavor to your dishes

Step one for the gourmet vinaigrette -- a reduction balsamic glaze dressing recipe

as it comes to boiling, it should be gently stirred

The amounts of balsamic vinegar and olive oil used in this vinaigrette dressing recipe is a matter of choice. One can choose the proportion according to personal taste. Some people like more vinegar, other like more olive oil. Important though is to combine the two ingredients under heat, so they mix and form an emulsion which looks smooth and silky. Also, by reducing its volume, the balsamic vinegar gains in taste as it becomes stronger. The added olive oil makes the dressing smooth and adds an extra silky consistency -- some balsamic glazes have no olive oil at all though.

First, the balsamic vinegar is placed into the pan and brought to the boiling point. At that moment, the heat should be lowered for simmering. The balsamic vinegar is stirred with a woodden spoon until it starts showing little bubbles as it gets more concentrated and the sugars contained naturally in it start melting.

The second and final step of the balsamic reduction glaze dressing recipe -- ready to be stored in a jar

The second step of this vinaigrette dressing recipe is the last one too. The balsamic vinegar will reduce its own volume and become more concentrate and thickens. When it becomes thick enough, it must be taken off the heat. The thickness can be tested by letting drops of the mixture fall off the wooden spoon. When the mixture gets syrupy and the drop takes time to form on the edge of the spoon, the pot must be taken off the heat and stirred for another minute, until it is getting cold.

Be not afraid to try it for the first time, the worst-case scenario is that your gourmet dressing will be too thick or too fluid. It will taste good anyway and you can boil it again if it is not thick enough if you want or adding some more vinegar to get it less thick.

The ideal easy gourmet balsamic dressing vinaigrette has the consistency of a good honey. The gourmet balsamic dressing is best stored in a small jar or bottle, preferably of dark color or an opaque material. If there is nothing suitable available, the balsamic vinegar and olive oil dressing can be stored in a dark, cool place. The dressing recipe is at its end!

The balsamic vinegar and olive oil vinaigrette dressing can be used to decorate food and the plate

Drops of the easy gourmet balsamic vinegar and olive oil dressing can decorate the plate before a sandwich or the roast and vegetables are placed on it. Make the food a feast for more than one sense!

There is nothing more appealing to senses than a nice piece of roast meat with roast vegetables on a plate which has on it a pattern designed using this vinaigrette dressing. A fork that was previously dipped into the balsamic vinegar-olive oil reduction can be shifted over the plate first and the whole meal, after it was put onto the plate.

this is a simple example of a sandwich, slightly salted slices of avocado topped with the easy gourmet home made balsamic vinegar and olive oil dresssing. Avocado is a smart choice for a tasty and healthy snack. It is a good choice to be included into a vegan diet. Avocado is highly recommended in any diet. A drop of lemon juice can be added, starngely it does not change the taste of the dressing but highlights it. Go on, try it!

Healthy sauces based on balsamic vinegraitte

Use a sauce of a balsamic vinegraitte for your dishes to make a difference. Healthy food is said to be less tasty -- and maybe with reason as healthy guidelines are against frying and processing the foodstuff but instead just steaming or boiling or baking. A healthy sauce based on balsamic vinegraitte can solve this problem. balsamic vinegar is not harmful for health, on the contrary, but it gives a great new taste to a simple steamed vegetable too!

About the balsamic vinegar

We do know that as far back as 900 years ago, vintners in the Modena, Italy region were making balsamic vinegar. It was then used as a tonic and bestowed as a favor to those of importance.

Balsamic vinegar is not a wine vinegar. It is not made from wine, but from grape pressings that have never been permitted to ferment into wine.

The white sweet grapes of Trebbiano are pressed and boiled down to a dark colored syrup. A strictly controlled process of aging is then done which takes years. Fisrt, the syrup is placed into oaken kegs together with a "mother vinegar", the agent to start fermentation.Over the years, the vinegar is moved in smaller kegs, as it is losing volum, similar to process when brandy is made. Over the years it graduates to smaller and smaller kegs made of chestnut, cherrywood, ash, mulberry, and juniper until it is ready for sale. All of these woods progressively add character to the vinegar. As it ages, moisture evaporates out, further thickening the vinegar and concentrating the flavor.

Sometimes balsamic vinegars have been aged for over 100 years. This aging process makes true balsamic vinegar from Modena in Northern Italy very expensive. Luckily, a little balsamic vinegar goes a long way, much like saffron.

The aging process can take up to twelve years minimum for true balsamic vinegar. Only then it can be legally labeled aceto balsamico tradizionale.

Less than 3,000 gallons of genuine balsamico are released each year. It is so highly prized that it is considered disgraceful to cook with it. Gourmets profess that genuine balsamico should be enjoyed in its virgin form, much like a fine aged whiskey.

Luckily, there are less expensive balsamic vinegars available for home cooks. A pint of imported Italian balsamic vinegar, aged for less than twelve years, can be bought for under $20 and is suitable for vinaigrettes, sauces, or marinades. Since the flavor is so intense, most reasy gourmet recipes calling for balsamic vinegar use 1/4 cup or less.

Health benefits of balsamic vinegar

The health benefits of balsamic vinegar are based on its qualities. Balsamic vinegar has most of the nutrients present intact from the parent grapes. Nutrients like iron, calcium, potassium, manganese, phosphorus and magnesium are in its composition in adequate amounts. Using balsamic vinegar in the daily diet will benefit one immensely.

  1. Antioxidant Properties

Oxidation reactions that take place in the body to produce energy will form the damaging free radicals as by-products. Free radicals are at the base of the premature aging, hardening of arterial walls and cancer. Antioxidants from balsamic vinegar destroy these free radicals.

  2. Fights Cancer

The grapes contain a bioflavonoid quercetin. Together with vitamin C, this antioxidant imporoves the immune system and helps fight cancer and other infectious diseases and inflammations. Balsamic vinegar contains polyphenols, other anticancer agents.

  3. Lowers the Risks of Heart Attacks

Balsamic vinegar is low in saturated fat. It reduces cholesterol. As it is low in sodium, it enhances heart health and reduces high blood pressure.

  4. Controls Diabetes

Research shows that at least 5 teaspoons of balsamic vinegar a day enhances insulin sensitivity. As a result of insulin sensitivity, the better the diabetes control.

  5. Pain Reliever

In ancient times, folk healers had the balsamic vinegar in their medicinal kit to relieve people of their body pain. They used balsamic vinegar to treat wounds and infections too. The vinegar's anti-bacterial and anti-viral properties healed wounds.

  6. Assists Digestion

Balsamic vinegar stimulates the activity of pepsin enzyme in the body. Pepsin is a digestive enzyme, which helps break proteins into smaller units (amino acids). It also assists the intestine in absorbing amino acids quickly.. Efficient amino acid absorption helps the body to utilize it for cell building, repair and other body maintenance process

  7. Besides these health benefits, balsamic vinegar also reduces the frequency of headache, strengthens bones (calcium absorption), energizes the body and prevents anemia. It also helps in weight loss by suppressing appetite.

How to buy an store olive oil and how to use it for cooking or making easy gourmet sauces

Olive oil is better known in the world. Beside the taste it adds to easy gourmet recipes, olive oil has also health benefits and they also contribute to maintain the good functioning of the body.Olives are considered fruits. More and more countries sstart developing their own olive oil production as interest on the market grows worldwide for the product.

Traditional olive oil producers are Italy, Greece and Spain but countries like France, the United States, Croatia, Australia, South Africa are catching up as their own popluation's consumption is growing.

Prices of olive oils are determined by quality but also by the marketing of new brands which offer often good quality product for less in order to penetrate a market.

It is trherefore smart to buy not according to the price or brand but according to a smart choice of a savvy buyer.

When cooking with olive oil, use your extra-virgin expensive oil for salads, dressings. Brush it over a baked potato or add it to mashed potatoes instead of butter. Extra virgin olive oil tastes good on baked or boilt vegetables or brushed onto fish or meat.

When sautéing or frying, use straight olive oil.

For deep frying, the olive oil grade "olive oil," is the best because it has a higher smoke point (410º F) than virgin or extra virgin oils.

  1. The best olive oil is the Extra Virgin Olive Oil. It should not be used for cooking though but for salads. It is the olive oil produced by cold pressing and has a very low acidity of 1%.

  2. Virgin Olive Oil is made from olives riper than the ones used for extra-virgin oil. Virgin olive oil is produced in the same way, but it is essentially a lower-grade extra virgin oil. Its acidity is a slightly higher at 1 1/2%.

  3. Refined Olive Oil is made by refining the virgin olive oil. The acidity level is higher than 3.3%. It also has an unpleasant flavor.

  4. Pure Olive Oil usually called just olive oil, comes either from the second cold pressing or the chemical extraction of the olive mash lef over. It is also called commercial grade oil. Pure olive oil is much lighter in color and blander It is a general-purpose (all-purpose) olive oil. It is called pure because there are no other oils mixed with it.

  5. Extra light olive oil is has been considerably processed and only retains a very mild olive flavour.

Get a halogen oven and eat delicious veggies and meat with the balsamic vinegar reduction dressing

I knew about the halogen cooker -- or halogen table oven - when it did not become the trendy item that it is nowadays, the bestseller on Amazon. My colleague in Botswana, a lady teacher from the British Guyana, Mrs. Saw, had one when they were only sold by Glomail and used to share the chicken she was making in it. She said it was too much for her alone. I made the salads.

I always wondered how come it was so tasty, not knowing that we were experimenting with a cooking method that is accepted as the smartest and healthiest one today. Mma Saw only knew that she is paying much less electricity and was happy. I was paying even less electricity and I was happy too.

Get a halogen oven and cook your veggies in the same time with your preferred meat, in just about 30% of the usual time. Then you can use the easy gourmet recipe to engance flavor and taste.

Is there anyone swimming against the trend and does not care about healthy eating?
