We do know that as far back as 900 years ago, vintners in the Modena, Italy region were making balsamic vinegar. It was then used as a tonic and bestowed as a favor to those of importance.

Balsamic vinegar is not a wine vinegar. It is not made from wine, but from grape pressings that have never been permitted to ferment into wine.

The white sweet grapes of Trebbiano are pressed and boiled down to a dark colored syrup. A strictly controlled process of aging is then done which takes years. Fisrt, the syrup is placed into oaken kegs together with a "mother vinegar", the agent to start fermentation.Over the years, the vinegar is moved in smaller kegs, as it is losing volum, similar to process when brandy is made. All of these woods progressively add character to the vinegar. As it ages, moisture evaporates out, further thickening the vinegar and concentrating the flavor.

Sometimes balsamic vinegars have been aged for over 100 years. This aging process makes true balsamic vinegar from Modena in Northern Italy very expensive. Luckily, a little balsamic vinegar goes a long way, much like saffron.

The aging process can take up to twelve years minimum for true balsamic vinegar. Only then it can be legally labeled aceto balsamico tradizionale.

Less than 3,000 gallons of genuine balsamico are released each year. It is so highly prized that it is considered disgraceful to cook with it. Gourmets profess that genuine balsamico should be enjoyed in its virgin form, much like a fine aged whiskey.

Luckily, there are less expensive balsamic vinegars available for home cooks.       i just made the balsamic dressing, half/half vinegar and olive oil, some honey, it is so good, i am using it for party sandwiches with quail eggs and other plate with smoked salmon. I have no doubts, people will appreciate my effort.

      Yeap, I like to made my own dressing - something simple and tasty that goes with almost everything: 1 tbs vinegar, 2 tbs olive oil, 3 tbs sour cream, chopped garlic, a bit of dill and parsley, a drop of salt and black pepper, sweet red chilli pepper all mixed with a small cup of vegetable or chicken soup :)

      I bought some reduction a while ago, a huge bottle, and was shocked by how quickly it vanished. I will try making my own! I make my own dressing with equal parts olive oil and balsamic vinegar (1 tsp for a salad), a smidge of honey mustard, fresh ground black pepper, and shaved Parmesan. Lovely lens; :::blessed:::!

      Small things make a huge difference... I could sense drops of Love layered with soy sauce as a primer on the plates! Anything served with love can be eaten blindfold. :)
