Healthy and Filling Dinner Recipes

Dinner is a very important time for virtually everyone, with the hustle and bustle of the modern world very few people have the time for breakfast and lunch, to cover up for the losses throughout the day they overeat when it comes to dinner. Families usually spend dinnertime together, and so it is a very real possibility that one tends to indulge in unhealthy foods with family and relaxes at night time after a hard day’s work.

Grilled Chicken breasts and tomato sauce

This dinner dish is very tasty as well as very healthy. The chicken breasts here can be roasted, grilled and even boiled. So you can further modify the dish and bring it down to an even lower level of calorie in take. Here we will grill our chicken breast and prepare it to serve four people. Begin by gathering the following ingredients:

  1. Boneless chicken breast (5 ounces)
  2. Yellow tomatoes- 4 (cut them in half and take out the seeds)
  3. Extra-virgin olive oil (1- 1.5 tbsp.)
  4. Garlic cloves-2 (chopped)
  5. Balsamic vinegar (1 tbsp.)
  6. Basil- freshly chopped (3 tbsp.)
  7. Salt (1/4 tsp.)
  8. Black pepper- freshly ground (1/4 tsp.)
  9. Flat-leaf Parsley (2 tbsp.)
  10. Thyme- freshly chopped (1 tbsp.)
  11. Blender
  12. Frying pan

Because we are grilling the chicken, start off by preparing the grill. The grill will also be required for the tomatoes. To prepare the grill, start a hot fire using charcoals or coals on a grill or if u is using a gas grill or broiler, preheat them. Remember to stay away from the heat and the burning coals. Next cover the gas grill, or the charcoal grill with a grill rack, making sure they are at least six inches above the heat source. Next lie out the tomatoes on the grill and let them cook for at least ten minutes. The idea is to blacken them and take them out and put them in a bowl covered with plastic wrap. After the tomatoes are grilled, take out a frying pan and add olive oil in it. After the oil is heated add garlic and sauté it. Do this for at least a minute. Set aside this paste after the garlic is ready.

In the next step take out a blender and blend together the tomatoes done earlier, the garlic sauté and vinegar. Make sure the mixture is blended well. Then stir a tbsp. of basil and 1/8 tsp. of pepper.

Take out your chicken piece and season it with salt and pepper. In a separate dish, stir together the thyme, parsley and basil and out this mixture on the chicken. Now you simply have to grill your chicken, making sure it is properly cooked and not raw. Spend approximately five minutes on each side of the chicken breast. After you have grilled it, its ready to be eaten.

Baked meatballs in tomato sauce

Anything that is baked is always the healthier option; it always has less calories than say a food item which is fried. Baked meatballs are a healthy, contain less fat and are delicious to eat at dinnertime with the family. Before you begin, gather up the following ingredients:

For preparing the meatballs:

Beef mince (250-300g)

Bread crumbs (half cup)

Onion- one large diced (2 tbsp.)


Tomato relish (tomato chutney)-2tbsp.

Worcestershire sauce- 1tbsp

Garlic clove-2 (1 tsp.)

Parsley (1 tsp.)

Thyme (1 tsp.)

Oregano (1 tsp.)

Salt (to taste)

Pepper (taste)

For preparing tomato sauce:

Onion finely chopped- 2

Olive Oil- 1tbsp.

Tomato paste

Garlic cloves-4

Worcestershire sauce- 1tsp.

Brown sugar-3 tsp.

Oregano (dried)-1tsp.

Marjoram- 1tsp.


Water- 1.5 cup

After all the ingredients have been assembled, start off by preheating the oven to about 200 C. We will begin by preparing meatballs first. For that, in a hot saucepan, fry the onions until light brown and put them aside to cool down. Then in a large bowl add the mince, then the egg, Worcestershire sauce, thyme, parsley, oregano, tomato chutney, the onion fried earlier, garlic and breadcrumbs. Mix them properly together and make balls out of the mixture and set it on the side.

Next, we will prepare the tomato sauce. Sauté onions in hot olive oil, and separately cook the bacon. After both of them are done, add bacon to the onion as well as worcestershire sauce and stir it for about 40 seconds. Continue stirring as you pour the tomatoes and brown sugar, garlic, pepper, oregano and marjoram. Continue to stir for another five to six minutes.

When both of the items are prepared separately, put the meatballs and the tomato sauce in a dish to be placed in the oven, remember to add water and bake it for about 25 minutes, preferably until the meatballs are cooked properly. After they have cooked, serve your delicious meatballs with tomato sauce and enjoy with your family!

      Interesting dish here! It's true that people usually miss their breakfast or lunch or even both, and to cover they eat more at dinner. This habit should be discouraged. Breakfast should be there for a healthy start of the day and the day should end with a light to moderate dinner.
