Zucchini Hot Sub Sandwich

In honor of Sneak Some Zucchini on Your Neighbors Porch Day on August 8th I am including a terrific zucchini recipe so your neighbor knows what to do with the zucchini.


1 tbsp. butter or margarine

2 med. zucchini, cubed

1/8 tsp. red pepper flakes

salt and pepper to taste


1 cup premade spaghetti sauce of your choice


1 1/2 cups shredded mozzarella cheese


1 loaf of French or Italian Bread cut into 4 pieces.


Preheat the oven to 350 degrees F (175 degrees C).

Melt butter in a skillet over medium heat.

Cook the zucchini in butter until browned and slightly tender.

Season with red pepper flakes, salt, and pepper.

Spoon a generous amount of the zucchini mixture into each piece of bread.

Cover zucchini with about 1/4 cup marinara sauce per sandwich.

Top with a handful of shredded mozzarella.

Close the rolls, and wrap individually in aluminum foil.

Bake for 15 minutes in the preheated oven, until bread is heated through, rolls are soft, and cheese is melted.

Makes 4 servings.

On August 18, 1587 Virginia Dare, granddaughter of Governor John White of the Colony of Roanoke, becomes the first English child born in the Americas to Ananias and Eleanor Dare. She and the rest of the colonists at Roanoke disappeared at some point before August 18, 1590. The only clue was the word "Croatoan" carved into a post.

      very interesting...especially since my birthday is this month too...i didn't know there were so many events on the month of August...trivia I also got from my aunt is that this August of 2010 has 5 Sundays, 5 Mondays and 5 doesn't happen that often..she said it happens once in every 823 years...
