This delightful transformation isn't quick - taking loving time with the scent of radiant flavor to top a steak, burger - to result in ultimate gustatory satisfaction!

Most recipes call for cooking the onions in olive oil, but some cooks prefer using butter, and nowadays nutritionists are recommending grapeseed, coconut and walnut oils. Cast iron fry pans are usually the pan of choice, but once the news is out that caramelizing onions via crock pot, I'm guessing Crock Pot will become the new Fry Pan! Caramelized Onions for Pizza! - nice demonstration
Cook demonstrates cutting petals before he plunks them into a stainless steel skillet over gas heat. He separates the petals and begins stirring, turning the hot pan down. Chop them in advance. Melt butter on a med-high flame in stainless steel. Plop the onions in and begin shaking the pan and stirring. Caramelization begins and turn the flame down to prevent burning. Stir, stir, stir.
Add couple pinches, maybe 1 t. salt towards the end of cooking. Near the end add white wine to lossen brown bits from the bottom of the pan, maybe 1/4 C wine. Cook down until wine disappears. Smell the scent.
