Cooking Tools & Recipes & Methods for the Perfect Caramelized Onions

The first time I cooked up a mass of sliced onions I marveled as they changed from crisp to soft, rich glistening caramel.

As the natural sugars caramelize their flavor intensifies in a mellow manner.

This delightful transformation isn't quick - taking loving time with the scent of radiant flavor to top a steak, burger - to result in ultimate gustatory satisfaction!

The photo shows sauteing onions mid-way through cooking in a cast iron pan, bathed in olive oil, and exuding promise.

Most recipes call for cooking the onions in olive oil, but some cooks prefer using butter, and nowadays nutritionists are recommending grapeseed, coconut and walnut oils. Cast iron fry pans are usually the pan of choice, but once the news is out that caramelizing onions via crock pot, I'm guessing Crock Pot will become the new Fry Pan! Caramelized Onions for Pizza! - nice demonstration

Cook demonstrates cutting petals before he plunks them into a stainless steel skillet over gas heat. He separates the petals and begins stirring, turning the hot pan down. Sprinkling sea salt or kosher salt helps absorb the onion water. In about 15 minutes onions are ready to top your pizza! Get going!

Chop them in advance. Melt butter on a med-high flame in stainless steel. Plop the onions in and begin shaking the pan and stirring. Caramelization begins and turn the flame down to prevent burning. Stir, stir, stir.

Add couple pinches, maybe 1 t. salt towards the end of cooking. Near the end add white wine to lossen brown bits from the bottom of the pan, maybe 1/4 C wine. Cook down until wine disappears. Smell the scent.

      You have made me so hungry right now! LOL. Man, extra sauteed onions on a pizza and nothing else transforms it into something so yummy everyone should give it a chance. You got me thinking about that. I used to eat pizza like that for years. Everyone always poo poo'd it until they tried it and became addicted.

      Nice lens. I learned about carmelized onions when my roommate in college was cooking his various meals (he was from Taiwan and enjoyed vegetables poured over rice). Congrats on a nice presentation!
