Pick from a patch of pumpkin cheesecake recipes

Now fairly ubiquitous on restaurant menus & in the ovens of home bakers, pumpkin cheesecake was once a novel idea -- at least to me. I was surprised to hear "pumpkin" and "cheesecake" in the same breath when first served this creamy treat 2 decades ago at a family member's home. At first I assumed I wouldn't like it, as I'm not a huge pumpkin pie fan (getting better, but it's still not a top pick for me) and had only just begun to appreciate pumpkin soups, pumpkin ravioli & other savory pumpkin dishes. Quite quickly I discovered this was no pie, but rather a richer, more decadent dessert that serves as a perfect "gateway" dish to other pumpkin treats.
