My Christmas Dinner will be Christmas Lunch

This year I'm having an easy Christmas lunch. I won't be hanging over the hot stove, one hand basting and the other hand stirring gravies and sauces.

An hour's preparation on Christmas Eve and I'll be ready for lunch on Christmas Day. Yabbies, glazed ham, potato salad and a green salad, crusty bread and all washed down with some chilled Mount Pleasant Semillon from the Hunter Valley.,

Cook time: 10 min
Ready in: 40 min
Yields: Any

Yabbies for Lunch

  • Yabbies - approx 8 per person
  • 100 g butter
  • 3 - 4 large garlic cloves


  1. Put the yabbies in a deep bowl in the freezer for 1 hour. Boil a large pot of salted water, add yabbies, cook for 5 minutes. Drain and refresh in cold water to stop the cooking process.
  2. Twist off the head, cut through the centre of the underside of the tail and gently peel the shell away from the meat. Remove the dark intestine. Place in a large bowl.
  3. Smoosh the garlic into the butter. Toss the butter very quickly in a pan over low heat. Don't cook it! You only want to warm it up.
  4. Pour the warm butter over the yabbies. Serve with crisp salad

Fresh Green Salad

Herb Dressing TIme

Serves: 6

Fresh Herb Dressing

  • 1 cup (loosely packed) flat-leaf parsley
  • finely chopped
  • 1/2 cup (firmly packed) mint
  • finely chopped
  • 1/2 cup (firmly packed) basil
  • finely chopped
  • 75 mls (5 US tablespoons) extra virgin olive oil
  • 1 lge garlic clove finely chopped
  • grated rind of 1 lemon


  1. Combine ingredients in a bowl.
  2. Season to taste.
Prep time: 20 min
Cook time: 2 hours 10 min
Ready in: 2 hours 30 min
Yields: 6

Potato Salad

  • 5 cups peeled and cubed potatoes
  • 1/4 cup good vegetable oil
  • 1/3 cup lemon juice
  • 1 teaspoon dry mustard
  • 1/2 cup mayonnaise
  • 1/4 cup chopped green onions
  • 1/4 cup chopped red onions
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground salt
  • 2 teaspoons white sugar
  • 1/2 cup chopped fresh parsley


  1. Boil potatoes till tender but still firm. Drain, let cool, and cube. Place in a large bowl.
  2. In a small bowl, mix together lemon juice, oil, sugar, salt, pepper, mustard and Worcestershire sauce
  3. Blend in mayonnaise. Pour over potatoes, and stir to coat
  4. Mix in onions and parsley.
  5. Refrigerate for at least 2 hours before serving.

      Well, we just ended Christmas a few months ago, so I'm not sure what I will cook next Christmas. I am hoping to not have to cook a big meal, but we'll see :) Love seeing what others do during the holidays, and Christmas in Australia looks pretty exotic ....all that sun :)

      We need a year off from cooking and preparing Christmas lunch.Sounds like a yummy menu at yours this year!Yabbies sound delish, must try them!
