I love spring and the renewal that come with it, and Easter is one of the most wonderful symbols of renewal and rebirth. I think that's why I love Easter so much. I'm always ready to celebrate.

It's easy to make an Easter bunny cake with this cute stand up bunny pan from Wilton. It's one of my favorites year after year. The pan produces a lifelike bunny with long ears and plump cheeks nestled in a sitting position. The set also includes complete instructions for making 5 different bunnies.

This Easter basket cake from Betty Crocker is super simple to make, all you need is your cake, icing, green food coloring, coconut, and some candy eggs.

Easter Bunny In an Egg Cake
Here's another cake I created for Amazing Moms. This one was really fun, because the idea started as a tiny cupcake pick, and evolved into this cake. If you 'd like to make your own hatching Easter Bunny cake it's super easy!
Just use an oval cake pan to make cracked eggshell, and use the other half of the cake to make the ears. Use a smaller oval pan to make the bunny.
Ice the egg with your favorite Easter egg color. You can add polka dots if you'd like with a large round decorator tip. Let the icing dry a bit and flatten the dots out with your fingers.
Ice the bunny white and cover it with shredded coconut. Color some coconut pink for the inside of the ears by shaking it in a plastic bag with pink food color.
Add jelly beans for the nose and eyes.
