Why do North Americans Eat Ham at Easter?

In the days before refrigeration, meat was killed in fall. People would cure and smoke their pork over the winter and it was usually ready to eat around Easter time. People usually didn't kill fresh meat in spring-time, so there wouldn't have been many options for meat. This made Ham a natural choice for an Easter celebration. This is especially true in North America where lamb has never been really popular.

-Jello Salad, for a flashback to the 70's.

-Deviled Eggs, since eggs traditional Easter fare.

-Cheese, crackers and pickles

-Mustard Sauce for the Easter ham

-A green salad with some nice spring greens.

I always cook ham for Easter so I enjoyed your lens. Other traditional parts of our menu include deviled eggs, fresh asparagus, and usually coconut cake for dessert. When my sons were younger, we always had Easter baskets and hunted eggs. Now that I have grandchildren, we're doing those things again.
