Super Easy Sugar Cookies for Christmas

If you love the idea of making cookies for Christmas but the time and effort involved get in the way, make these easy sugar cookies with jam in the middle. They're so easy (I'll tell you why in a minute).

These cookies can be made ahead of time and frozen so they're ready when you need them. When guests arrive, you can pull out the container from the freezer. Then let the cookies thaw about 10 minutes on a plate or place them in the microwave for 10 seconds to thaw and warm them.

Add the sugar cookies to a decorative plate with some nuts and candies for a festive treat you'll be proud to serve.

My Big Secret to Making Easy Sugar Cookies

I Use a Cookie Mix.

Okay, many of you might call this cheating, but for these delicious cookies, I use a sugar cookie mix. Yep. I made these sugar cookies from a mix and they're delicious!

When you think about it, the mix just contains the sugar, flour, baking powder, and salt. And when you use a mix, the measuring is done for you.

You add fresh eggs, butter, and milk or whatever the directions call for. And a cookie mix makes the time to make cookies so much shorter.

Add Jam in the Center of the Sugar Cookies

Make the sugar cookies according to the package directions (or if you must, according to your recipe!).

Chill the dough.

Roll out the dough on the thin side, and cut into circles (use a floured cookie cutter or a glass).

Set cookies on cookie sheet then place a small spoonful of jam on each cookie. Top with another cookie. Slightly press the edges to seal the two cookies.

Bake and enjoy!

Cookie Sheets for Baking Cookies - Insulated Cookie Sheets and Baking Stones Bake Great Cookies!

It pays to invest in a good insulated cookie sheet or two for baking. The two layers allow the heat to bake cookies (and anything else you bake on it) evenly.

I also use my baking stone for baking cookies when I make a lot. It's wonderful, and the cookies always turn out great!

Don't overbake these cookies. Be sure to let the sugar cookies with jam rest a minute or two on the sheet before removing them. They tend to be soft in the middle from the jam, of course! So, letting them rest allows them to set up a bit before moving them to a plate or cooling rack.
