that is not nice. They have a fear (sort of) of meat, my thoughts. Some lean beef and lean turkey is fat free and filled with protein.

Gotta have some fat. Some nice marbling is the key to a quality steak. No need to eat a big slab o' fat stuck on the side of a piece of meat, but the fact is that fat = flavor.

Nah, nah, nah you don't 'add' flavor to meat. You only use 'extras' to bring out or accentuate the flavor. Respect the meat, don't hide it.
So true, that's why I always add some ground chuck to the lean ground beef when we make the hamburgers.
Just adding a little won't hide it. It makes it even better.
If your steak tastes like sauce you've done something terribly, terribly wrong.
My steak tastes like ketchup, because that's what I dump all over it.
Once your steak is done, then you add a little and slow cook it in.
Lower the temp a little on the stove,.
Then bona petite.
