Go Nuts Over This Holiday!

National Pistachio Day on the 26th of January is the perfect time to indulge in a favorite and beloved nut. Pistachios are best salted and in the shell, but you will find them natural in the shell and without the shell.

Take time to celebrate with some pistachio pudding, ice cream, cheesecake, muffins or cookies. All favorite treats of the pistachio lover. And don't forget to share your treats and spread the good word about National Pistachio Day. Have a nutty good time!

The Best Pistachio Cookies! - Lime Pistachio Cookies



1 cup butter, softened

2 cups brown sugar

2 eggs

1 tbls grated lime peel

1/4 cup sour cream

3 1/2 cups all purpose flour

1/4 tsp salt

1 tsp baking soda

3/4 cup shelled pistachios, chopped

powdered sugar

Preheat oven to 350°.

Mix the butter and sugar untill creamy. Add eggs, one at a time and beat until smooth. Beat in remaining ingredients except for pistachios, until mixture is combined. Fold in pistachios.

Drop cookies by rounded teaspoons two inches apart on a ungreased baking sheet. Bake for 10-12 minutes.

Cool, roll in powdered sugar.

Makes 3 dozen.


California Pistachios

Pistachios are native to the middle east and were first introduced in the U.S in 1854. They thrive in a desert-like climate with dry hot days and cool nights.

Central California has that perfect climate for growing pistachios and started commercially producing them in the 1970's. Today California is in a close tie with another major pistachio producer, Iran which produces some of the world's finest pistachios. California produces almost 100,000 tons of pistachios every year and that number continues to grow.

There is something so delightful about making muffins. They mix up so easy and the aroma is heavenly while they are baking.


  • 1 stick butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 tsp. almond extract
  • 1 cup sour cream
  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 cup pistachios shelled and chopped
  • coarse sugar crystals


  1. Preheat oven to 400F.
  2. Mix together butter and sugars until creamy.
  3. Add eggs, almond extract and sour cream and mix until combined.
  4. Gradually add flour, baking soda, baking powder, cinnamon and salt.
  5. Fold in pistachios.
  6. Fill muffin cups or papers 2/3 full.
  7. Sprinkle with sugar.
  8. Bake for 22 minutes.
  9. Cool.

      Pistachios are my all-time favorite nut! I am completely addicted to them and when I start snacking on them, I only notice how much I've eaten when the bowl is empty!

      I do like pistachios...I even like cracking the shells! I did not know that pistachios were native to the middle east. I think the Pistachio Muffins recipe looks great...will have to give it a try.
