Bakerella's Pumpkin Pie Bites Recipe

Without a doubt, Bakerella is one of the most creative persons I've known. She creates unique and delicious treats and goodies. One of my favorite things from Bakerella is that she loves to bake in mini sizes or bite sizes. Her bite size cupcakes are a hit, but now Bakerella has come out with a new cute dessert: Pumpkin Pie Bites! These are so cute and delicious, it's very hard not to eat them all. Here I will share with you Bakerella's Pumpkin Pie Bites recipe and directions on how you can too bake these. They are perfect now for the Fall. Bake them for Thanksgiving or even Halloween. Ingredients For The Pumpkin Pie Bites

Get All You Need To Make Your Pumpkin Pie Bites

What Would You Need:

* 1 mini muffin mold

* 2 Refrigerated ready-to-roll pie crust

* 1/2 Cup of Sugar

* 8 oz. Cream Cheese (room temperature)

* 1 Cup of Canned Pumpkin

* 1 teaspoon of Vanilla

* 3 eggs

* 1 teaspoon pumpkin pie spice

* Pumpkin- Shaped Cookie Cutter

Cut Your Pumpkin Shaped Pie Crust - Use pumpkin cookie cutter to cut your Pumpkin Pie Crusts

Get your ready to roll your pie crust from the refrigerator and roll it to make it thinner than how it comes. Use your pumpkin shaped cookie cutter and start cutting the pie crust into little pumpkin pie.

With your mini muffin pan, place each little pumpkin pie crust into the mini muffin molds.

When placing your pumpkin pie crust into your mini muffin molds, make sure that the stem is sticking out and try not to let them touch or get to close. Make 12 pies at the same time.

* With one of the eggs, just using the egg white, brush the top of your little pie crust with your egg whites, before putting the pumpkin pie inside. This will make it look golden brown.

How To Make Your Pumpkin Pie Filling

Pumpkin Pie Filling for your Pumpkin Pie Bites

Recipe from Bakerella:

Mix your cream cheese, sugar, canned pumpkin, the two eggs, vanilla and pumpkin spice. After your get a nice puree like mixture, spoon it into each pumpkin crust.

Bake At 350 Degrees For 12-15 Minutes - Bake your Pumpkin Pie Bites for 12-15 min.

After filling the pumpkin pie crust with the pumpkin pie filling. Use a spoon to put the pumpkin pie in your molds.

Bake for 12-15 minutes and let them cool off before you decorate them.

      What a special treat for the holidays and not just Thanksgiving. Your mini pumpkin pies would be perfect throughout the holidays for a lot of taste in a couple little bites when we want to try so many things....and they are just so cute! Dark chocolate is a wonderful accompaniment to pumpkin pie that took my by surprise a few years ago.....yummy good!

      I'm a vegan, so I make my own vegan pumpkin desserts. I don't really do a lot of pumpkin pies (I can't eat wheat and rice and can't always eat spelt), but I love pumpkin puree and tofu. I sweeten with stevia (I'm diabetic) and sometimes add a bit of maple extract.

      These look great! But I'd have to take one (maybe two or three) and then leave the house ... or wherever they are. Otherwise, I'd probably end up eating an entire pie's worth. Somethin' about those minis that get me every time.

      These are really cute, but it wouldn't be worth making them for my tribe. They're too small, LOL! They go for regular size pies. We've gotten pretty lazy the past few years. My brother's family brings the pie from Costco. They sell them for cheaper than I can buy the ingredients and it's one huge pie.

      These pumpkin pie bites are definitely going to be part of my dessert menu one of these Autumn evenings. I love pumpkin pie, but find that a slice is often too filling. These will be perfect! Of course, I'll drop a dap of whipped cream on top. Five stars and favored.
