How to Prepare the Pumpkin Seeds
After you've scooped out your pumpkin for the Jack O 'Lantern, start on the seeds as soon as possible.
You have to clean all the bits of pumpkin meat off the seeds. Do this fairly quickly as, once the remaining pumpkin becomes dry, they will be a lot harder to remove.
Pull as much off the seeds as you can with your fingers, then place a colander or strainer in your sink and give the seeds a good rinse in cold water.
Wipe them off with a paper towel.
Place the seeds on a waxed paper cookie sheet to dry overnight.
No, you can't eat them until tomorrow!
Like your Pumpkin Seeds salty?
If you like your pumpkin seeds to be salty, let them sit in a bowl of water with one teaspoon of salt. Leave the seeds to soak for a couple of hours, then place them on waxed paper overnight.
How to Keep the Pumpkin Seeds
Put the dried pumpkin seeds into an airtight container.
You can keep containers of pumpkin seeds in the pantry for up to three months.
You can keep containers of pumpkin seeds in the frig for up to eight months.

Oven Bake the Pumpkin Seeds
Place the pumpkin seeds on a shallow tray.
Spray your seeds with butter spray.
Cook for 1 hour on high.
Microwave the Pumpkin Seeds
Place a slice of butter, to taste, in a microwavable rectangular baking dish. Heat for 30 seconds.
Place the pumpkin seeds into the dish and toss through the melted butter.
Spread the seeds out evenly into one layer on the bottom of the dish.
Microwave on high for 4 minutes.
Take out the dish and stir the seeds to prevent sticking (and burning)
Microwave on high another 4 minutes
Pumpkin seeds are really tasty when tossed in a bowl with pinches of celery salt, paprika and freshly ground black pepper.
Spicy Pumpkin Seeds
2 cups of pumpkin seeds
1 tablespoon butter, melted
1/2 teaspoon salt
pinch garlic salt
2 teaspoons Worcestershire sauce
Preheat oven to medium
Combine all ingredients thoroughly
Bake for one hour in a shallow baking dish
