Simple Recipe - Add Some Green Ice Cream!

Being diagnosed a diabetic, I knew that I could no longer enjoy the candies and treats that I had growing up. Those treats probably led me to diabetes anyway.

Cheesecake has always been one of my favorite things and I have experimented with several variations. One of these was using green tea powder. You not only get the flavor of the cheesecake, but also the benefits of green tea.

Instead of sugar, I use Xylitol which is safe for diabetics and is actually a little sweeter than sugar. It works great and can be substituted for sugar or sweeteners in any recipe. You can order some below through Amazon. If you use this safe alternative to pure sugar, your body will thank you!

What a combo, huh?

Cheesecake has always been one of my favorite things and I have experimented with several variations. One of these was using green tea powder. You not only get the flavor of the cheesecake, but also the benefits of green tea.

  • Prep time: 15 min
  • Cook time: 25 min
  • Ready in: 40 min
  • Yields: (As many slices as you want to make!)

Ingredients

  • Sugar Free Graham Cracker Crust in a tin - Fifty 50 makes a nice one but there are others out there
  • (1) 8 ounce package of cream cheese (any type will do).
  • (1/2) cup of Xylitol - Xylitol is 1:1 with regular sugar and it is safe for diabetics as long as you don't eat too much. (Available at grocery stores in the Health Food section or you can buy it at Amazon or online)
  • (1/2) tablepoon of green tea powder - (Available at Health Food Stores or at Amazon)
  • (2) Eggs

Instructions

  1. 1) Preheat the oven to 350F
  2. 2) Add all ingredients except prepared crust to either a food processor. I use a Magic Bullet as it mixes everything fine.
  3. 3) Pour the ingredients into the graham cracker crust. Some people prefer to use a tin and make their own crust. You can buy sugar free graham crackers and can crush them yourself and place in a pie tin with a little butter to keep the mixture stuck to the outside of the pan. I prefer to use one that is already made.
  4. 4) Bake the cheesecake in the preheated oven for about 20-25 minutes or until the cheesecake is set.
  5. 5) You can add whipped cream after cooling put on top or coat the cheesecake.
  6. When fully cooked, it is not bright green but has a green tinge to it!
