Give Mom A Special Gift On Her Special Day

As a mother and grandmother myself, I can't think of any better gift that to have your children make you a special Mother's Day meal. So maybe they make a small mess or don't do the dishes afterwards, but just remember, they were thinking about making you happy for just a few minutes.

Finger foods make this an easy-to-serve menu for a Mother's Day tea party. Two or three teenage girls might want to share in presenting the tea to honor their mothers. The foods are simple to prepare and can be done ahead.You may want to serve several kinds of tea- perhaps an oolong, an orange and spice blend, and a minted tea.To prepare the baked foods ahead, chill dough for the cheese wafers; slice and bake shortly before serving. Bake the bread a day ahead (or it can be baked and frozen for up to two weeks); the next day slice it, prepare the sandwiches, and wrap them in plastic film.

The cookies can be baked a day or two in advance, cut, and wrapped until serving.Arrange the melon balls in a bowl, chill, and garnish with mint. Use colorful wooden picks to spear them.This menu is just a suggestion to get you going. You can serve Mom any menu and I am sure she will enjoy it just as much.And don't forget to give your Mom a hug and a gift that you have picked just for her.

1/2 cup soft butter or margarine

1 jar (5 oz.) sharp process cheese spread

1 cup unsifted regular all-purpose flour

Dash each cayenne and nutmeg

Poppy seed, sesame seed, or paprika

Cream butter with cheese spread until fluffy. Blend in flour, cayenne, and nutmeg. Shape into two 8-inch rolls, 1 1/4 inches in diameter; wrap in waxed paper or plastic film and chill for several hours or overnight until firm.Slice about 1/8 inch thick. Sprinkle with poppy seed, sesame seed, or paprika. Bake on un-greased baking sheets in a 400 degrees oven for 6 to 8 minutes or until edges brown lightly. Cool on a wire rack. Makes 8 to 10 dozen.

Easy To Make Sandwiches

2 1/3 cups unsifted all-purpose flour

1 1/2 cups sugar

3/4 teaspoon salt

11/2 teaspoons baking powder

1 teaspoon cinnamon

3/4 cup finely chopped pecans or walnuts

1/4 cup milk

1 cup salad oil

1 teaspoon vanilla

3 eggs, slightly beaten

1 1/2 cups finely shredded carrots (about 4 medium-sized carrots)

Whipped cream cheese

Sift flour, sugar, salt, baking powder, and cinnamon into a bowl (if using instant-type flour, mix ingredients well); stir in nuts. Mix together milk, oil, vanilla, eggs, and carrots. Add to flour mixture and stir just until combined. Spread in a greased 5 1/4 by 9 1/4 inch loaf pan. Bake in a 325 degrees oven about 1 hour and 20 minutes or until bread is well browned and tests done in center. Cool and let stand overnight. Slice thinly; spread with whipped cream cheese, and cut into small sandwiches.

You'll need two 9-inch round cake pans with removable bottoms to make these cookies.


2 cups cake flour, sifted before measuring

1 tablespoon sugar

1 teaspoon salt

1/2 cup firm butter

About 6 tablespoons cold water

Pecan Filling (recipe follows)

Sift cake flour with sugar and salt into a bowl. Cut in butter until mixture resembles fine crumbs. Stir in water, one tablespoon at a time, until mixture clings together.Divide into two equal parts.

Roll each out to a circle a little larger than a 9-inch pan bottom. Place in bottom of pan, turning about l/2 inch of dough up around edge; prick bottom with fork. Bake in a 450 degrees oven for 10 to 12 minutes or until lightly browned. Remove pans to rack and cool slightly. Spread pastry rounds with cooled Pecan Filling, leaving a 1-inch margin around edge.

Bake in a 350 degrees oven about 15 minutes or until mixture is bubbly and lightly browned. Let cool in pans for about 5 minutes, then remove. When filling is almost firm (about 15 minutes), cut to serve; if it becomes too hard to cut, return to oven for several minutes to soften. Trim off curved edges and cut square center into small bars, or cut outer two inches in bars and center in wedges. Makes about 4 dozen small cookies.

Pecan Filling.Heat 1/2 cup butter, cups unsifted powdered sugar, and 1/4 cup honey until mixture boils. Remove from heat and let cool 15 minutes. Stir in 1 1/2 cups chopped pecans.

Delicious Fresh Fruits

Perfect For Mother's Day

With a melon baller, take your favorite fruits and scoop them into small balls.

Choose watermellon, cantalope, honeydew, or what ever fresh fruit is available.

Serve in a beautiful bowl topped with a spring of fresh mint.
