Anything by Jennifer Crusie, and the Susan Elizabeth Phillips' later books all have made me snort my Cheerios. I've definitely laughed out loud with them, no matter how many times I have read them.
Candide by Voltaire. It's old, and a lot of people would find it stuffy, but it appeals to my kind of humor.
Anything by Chelsea Handler always makes me laugh out loud. Check out My Horizontal Life.
