Minnesota (Zones 2-4) Annual Vegetables

Just a few

Growing annual vegetables can be fun hard work in the great northern midwest state of Minnesota. The zones range from 2 way up north near Canada to zone 4 down south along the Iowa border. Here is a list of just a few annual vegetables that I grew up planting. I hope this list helps along with my other hubs. Thank you for taking the time to read this.

Vegetables:


Asparagus: Plant in early spring- around April 15th. Space the plants 18 inches apart and space your rows 36 inches apart. It will take generally 1-2 years for you to get a harvest.

Beans, Lima: Plant in late May- around May 25th. Space the beans 3 inches apart in rows 24 inches apart. It takes usually 70-80 days to get a harvest.

Beans, Pole: Plant in mid May- around May 10th. Space these beans 3 inches apart in rows that are 30 inches apart. Give them a trellis (optional). Harvest will be in 60-65 days.

Beans, Snap: Plant in mid May- around May 10th. Space these 3 inches apart in rows spaced 18 inches apart. Harvest these beans around 50-60 days.

Beets: Plant beets around mid April: around April 15th. Space beets 3 inches apart in rows spaced 15 inches apart. Harvest your beets in 50-60 days.

Broccoli: Start your Broccoli indoors: around March 15th, then transplant them around May 1st. Space the plants 18 inches apart and the rows 24 inches apart. Harvest in 60-70 days.

Brussels Sprouts: Plant in mid May: around May 15th. Space them 12 inches apart in rows 24 inches apart. Harvest the brussels sprouts in 90-100 days.

Cabbage, Chinese: Plant in mid June: around June 20th. Space the cabbage plants 10 inches apart in rows spaced 24 inches apart. Harvest cabbage in 90-100 days.

Cabbage, Early: Start indoors: around March 15th, then transplant outside around May 1st. Space plants 12 inches apart in rows spaced 18 inches apart. Harvest in 60-70 days.

Cabbage, Late: Plant in mid May: around May 15th. Space (or thin) plants 18 inches apart in rows spaced 24 inches apart. Harvest in 90-100 days.

Carrot: Plant in mid April: around April 15th. Space carrots 2 inches apart in rows spaced 15 inches apart. Harvest carrots after 60-70 days.

Cauliflower: Start indoors around March 15th; transplant outside around May 1st. Space plants 12 inches apart in rows spaced 24 inches apart. Harvest in 50-60 days.

Celery: Start indoors around March 15th; transplant outside around May 20th. Space plants 6 inches apart in rows spaced 30 inches apart. Harvest celery in 100-110 days.

Chard: Plant around April 15th. Space (or thin) Chard plants 4 inches apart in rows spaced 15 inches apart. Harvest after 40-50 days.

Collards: Plant in mid June: around June 20th. Space plants 12 inches apart in rows spaced 24 inches apart. Harvest collards after 60-85 days.

Corn, Sweet: Plant in mid May; around May 15th. Space plants 8 inches apart in rows spaced 30 inches apart. Harvest sweet corn after 65-90 days.

Cucumber: Plant around May 20th. Space cucumber plants 6 inches apart in rows spaced 36 inches apart. Harvest (can be up to 4-6 weeks) after 50-60 days.

Eggplant: Start indoors around March 15th; then transplant outdoors around June 1st. Space plants 18 inches apart in rows spaced 30 inches apart. Harvest in 70-80 days.

Kale: Plant around June 25th. Space Kale plants 8 inches apart in rows spaced 24 inches apart. Harvest Kale after 50-70 days. This is a very hardy plant.

Kohlrabi: Plant around April 15th. Space plants 4 inches apart in rows spaced 15 inches apart. Harvest Kohlrabi after 50-60 days.

Lettuce, Head: Start indoors around March 15th; transplant outdoors around May 1st. Space plants 8 inches apart in rows spaced 15 inches apart. Harvest head lettuce after 60-70 days.

Lettuce, Leaf: Plant around April 15th. Space (or thin) plants to 3 inches apart in rows spaced 15 inches apart. Harvest leaf lettuce after 40-50 days.

Muskmelon: Plant around May 20th. Space plants 24 inches apart in rows spaced 36 inches apart. Harvest muskmelon after 80-90 days.

Okra: Plant around May 10th. Space plants 12 inches apart in rows spaced 36 inches apart. Harvest after 60 days.

Onion: Start indoors around February 15th; transplant outside around May 1st. Space onions 4 inches apart in rows spaced 15 inches apart. Harvest around 110-120 days.

Onion, sets: Transplant sets around April 15th. Space onions 1 inch apart in rows spaced 15 inches apart. Harvest around 40-50 days.

Parsnip: Plant around April 15th. Space plants 3 inches apart in rows spaced 24 inches apart. Harvest around 100-120 days.

Pea: Plant around April 15th. Space pea plants around 2 inches apart in rows spaced 15 inches apart. Harvest (for a few weeks) after 60-70 days.

Pepper: Start indoors around April 1st; transplant pepper plants outside around June 1st. Space plants 18 inches apart in rows spaced 30 inches apart. Harvest after 60-70 days.

Potato, Early: Plant around April 15th. Space potato plants 12 inches apart in rows spaced 30 inches apart. Harvest after 80-100 days.

Potato, Late: Plant around April 15th. Space potato plants 12 inches apart in rows spaced 36 inches apart. Harvest after 130-140 days.

Pumpkin, Pie: Plant pumpkins around May 10th. Space plants 24 inches apart in rows spaced 48 inches apart. Harvest after 90-110 days.

Radish: Plant around April 15th. Space (or thin) radish plants 2 inches apart in rows spaced 15 inches apart. Harvest mature radishes after 25-30 days.

Rhubarb: Plant around April 15th. Space plants 36 inches apart in rows spaced 48 inches apart. Harvest rhubarb after 1 year.

Spinach: Plant around April 15th. Space spinach plants 2 inches apart in rows spaced 15 inches apart. Harvest spinach after 40-50 days.

Squash, Summer: Plant around May 20th. Space plants 24 inches apart in rows spaced 48 inches apart. Harvest summer squash after 50-60 days.

Squash, Winter: Plant around May 20th. Space plants 24 inches apart in rows spaced 72 inches apart. Harvest winter squash after 90-120 days.

Tomato: Start indoors around April 15th; transplant outside around May 20th. Space plants 24 inches apart in rows spaced 36 inches apart. Harvest tomatoes after 65-80 days.

Turnip: Plant around April 15th. Space plants 3 inches apart in rows spaced 18 inches apart. Harvest turnips after 60-70 days.

Watermelon: Plant around May 20th. Space plants 96 inches apart in rows spaced 96 inches apart. Harvest watermelon after 65-90 days.
