I had a bunch of extra tomatoes last year. What I did was I cut them in half, placed them on a baking sheet, sprinkled salt, oregano, garlic powder and pepper over them along with a drizzle of olive oil. I baked them at 400 degrees for about 40 minutes. Then I froze them and used them in various recipes calling for tomatoes like soup and spaghetti sauce. They freeze really well.
