First of all you will have a choice between a cooktop that has the standard coil burners with a drip pan underneath, a smoothtop electric cooktop that uses radiant heating elements or an induction cooktop. The coil burner cooktop is the type of cooktop that you most likely grew up with. The great thing about this style is that the coil burners and drip pans can easily be replaced. The downside is that the coils don't always offer the most level cooking surface.

With a smoothtop electric cooktop you don't have to worry about having coils getting bent out of shape and providing an uneven surface and they tend to be easier to clean as they provide a completely flat surface that can be wiped down. However both types of cooktops use electricity to heat up and they heat and cool slowly which means you have less control over the heat.

An induction cooktop work by actually heating the cooking vessel (pots or pans) instead of heating the area that the vessel sits on. This is accomplished by an electromagnet that transfers its energy into heat as a conductive metal is placed on the cooktop. This has the benefit of cooking more efficiently as well as being more safe as the cooktop will only heat up where the vessel is sitting. The downside to this type of cooktop is that you must use a ferrous material such as cast iron or stainless steel to cook with.
