Cooking From Scratch - Easy BBQ Chicken in the Crock Pot
For a frugal person, the crock pot is man's best friend. It will save you from many nights when you would have called for take out instead of cooking something from scratch. Taking the time in the morning or even at lunch could ultimately save you hundreds of dollars a year if your other alternative is a restaurant meal. Taking the time to plan ahead and have a meal that is ready when you walk in the door is a life saver on busy days.
An old stand by at my house is BBQ Chicken in the crock pot. I can start this in the morning or at lunch. It is quick and easy to put together and has hearty, nutritious ingredients. It can be a complete meal all by itself, although I usually put together a salad to go with it.
Chicken - enough to feed your family, I usually use 3 boneless skinless chicken breasts, however you can use whatever cut you have on hand.
Potatoes - I use 4 large ones but again use whatever will feed your family. I peel and dice these.
Carrots - I will either peel and slice carrots or put in a half a bag of baby carrots, it depends on what I have on hand and what I have the time for.
BBQ sauce - For my family I use 1/2 of the bottle. We have tried different flavors of BBQ sauce and have liked all of them. Use what you have on hand to make it more frugal. If you are using more of the above ingredients then you should increase the amount of BBQ sauce. If you are using less, decrease the amount.
If you start this in the morning, you can place frozen chicken into the crock pot along with the other ingredients. Cook on low for 8 hours. If you are starting this at lunch, the chicken should be at least partially thawed and you will need to cook it on high for 4-5 hours. I like having the option of using frozen chicken. Sometimes I forget to take it out to thaw and sometimes I am really going to be gone all day. For thawed chicken, cooking it all day on low is too much.
My family really likes this meal and it has everything a meal should have - protein, vegetables and starch. The reasons I like it so much are because it is easy, inexpensive and good. Enjoy!
