Cooking from scratch - Potato Kielbasa recipe

Updated on August 9, 2007

This Potato Kielbasa recipe that I created is a favorite around here. It is easy to make and tastes great. Cooking from scratch is a great way to lower your grocery bill. This recipe is a great way to begin cooking from scratch if you are new to it. It is just so simple to make.

1/2 pound of kielbasa

3 large potatoes

1 15 oz can of tomato sauce

1 clove of garlic

1/4 teaspoon of pepper

1/2 teaspoon of basil is optional

Cut the kielbasa into bite size pieces. Peel and dice the potatoes and combine with the kielbasa in a large casserole dish. Mince or press the garlic and add the pepper and tomato sauce. Stir together well. Cover tightly with tinfoil and bake for 1 hour on 350.

This recipe is very budget friendly. When kielbasa goes on sale buy one get one free I always stock up. This recipe generally costs me around $2 to make and it will feed the six of us dinner with enough leftover for my husband to take for lunch. When I get it home I open each package and cut the kielbasa in half and freeze individually. If you have a larger family you might want to just use the entire kielbasa. You can also use more potatoes if you would like. Increasing the amount of potatoes or rice that you are having with a meal is a great way to stretch the amount of food. Keep in mind that if you use the entire kielbasa or many more potatoes, you may have to add more tomato sauce.

It looks great and seems simple enough to make. Looks like I will be going to our local Polish store soon to pick up some real Polish kielbasa.:)
