The Wonderful World of Crepes

A crepe is a very thin pancake that is traditionally made from wheat flour. Crepes originated in Brittany, France. They are now considered to be the "national" food of France. A common filling of the crepe is usually fruit, berries, or even cream fillings. Crepes can however become a meal within themselves. Some crepe fillings used to make them more of a meal have consisted of: asparagus, various cheeses and meat products and even eggs and vegetables.

So how are crepes made? Well, as stated above, a crepe is a pancake however the batter is a little different then that of a traditional pancake. Whereas a traditional pancake is fluffy, you want the crepe to be very thin. You can make a crepe in any pan but it is worth it to go to your local kitchen supply store and buy a poêle à crêpes or a flat frying pan designed specifically for making crepes. Most of your gourmet food stores should carry a ready made mix. This can get expensive but will save you some time.

How to make your own

Should you have to make your own mix simply use the following recipe:

1 egg 3 egg whites 1 c white flour 1 c fat-free milk (room temperature is recommended) 1 tbsp sugar 1/2 tsp salt 2 tbsps melted butter

Mix all the ingredients together. Heat your pan and coat the pan with a light layer of oil. You want the pan to heat to the point that you can begin to smell the aroma of the oil. Be careful to now turn up the heat too high. You don't want to burn the grease. Pour in a ½ cup to 1 cup of batter depending on the pan size. Tile the pan so that the batter forms a thin layer over the pan. You should begin to see the edges curling up. Lightly brown and then flip it over to the other side. When both sides are done remove from the pan and stuff with your favorite filling and serve. Now that's heaven.
