Marinated Chicken Skewers

The thought of making your own marinade may sound like too much work, but I've come up with this one, and it's both easy and healthy. You can use the marinade for whole boneless chicken breast, but I prefer cutting the meat into chunks. That way, the marinade hits more of the meat, and the chicken cooks faster on the grill.


1 lb. boneless chicken breast

1/4 cup extra virgin olive oil

2 Tbsp. fresh lemon juice (about 1 medium size lemon)

2-3 cloves garlic, minced

1 tsp. dried oregano

1 tsp. kosher salt

1/2 tsp. ground black pepper


Cut chicken into 1-inch chunks. Combine remaining ingredients in a large zip-loc bag, close bag and shake to combine. Then add chicken to bag. Marinate in your refrigerator for 45 minutes to one hour. (note: lemon juice begins "cooking" meat on contact, so be sure not to over-marinate). Skewer chicken onto metal or wooden skewers (if using wooden skewers, you should soak them in water for 30 minutes prior to using). Then grill the chicken on medium-high heat, turning occasionally, for about 10-12 minutes total, or until no longer pink and/or until the juices run clear. Serves 4
