South Beach Diet Phase 1 at Baja Fresh
Baja Fresh Fajitas
Baja Fresh is a Mexican restaurant fast food chain that emphasizes the word "fresh." In fact, the slogan on their website says, "No microwaves, no can openers, no freezers, no lard, no MSG, no compromises." And if you're on Phase 1 of the South Beach Diet, there are "no carb" options as well. Here are our best suggestions:
Bare Style Burritos
You can order any Baja Fresh burrito in a bowl instead of in a tortilla. That instantly makes them Phase 1-friendly, but then again some of their burritos have rice in them. So here is a list of the ones that do not have rice and are acceptable SBD Phase 1 options:
Baja Burrito-Your choice of grilled chicken, grilled steak, or pork carnitas with melted jack cheese, guacamole and Pico de Gallo.
Bean and Cheese-Simmered black or pinto beans with warm melted jack and cheddar cheeses, which can be topped with grilled chicken, grilled steak or pork carnitas as well.
Grilled Veggie-Grilled peppers, chilies and onions that are topped with black or pinto beans, melted jack and cheddar cheeses, lettuce, Pico de Gallo and sour cream.
Baja Ensalada with Chicken-Grilled chicken, romaine lettuce, tomatoes, Cotija cheese, Pico de Gallo, and tortilla strips, served with your choice of dressing. Just ask them to omit the tortilla strips, and order a low-carb dressing such as ranch on the side.
Fajitas-As in any Mexican restaurant, you can order fajitas without the tortillas and still have a satisfying meal. The fajitas at Baja Fresh are grilled chicken or steak, or pork carnitas, with grilled veggies, rice, beans, guacamole, Pico de Gallo, and sour cream. Just ask for them to not only omit the tortillas, but also the rice.
Side Salad-Romaine lettuce with tortilla strips, Pico de Gallo and Cotija cheese. Omit the tortilla strips and ask for a low-carb dressing on the side.
Black or Pinto Beans-8 oz. side of beans topped with Cotija cheese.
The beverages are not listed on the Baja Fresh website, but I know they serve bottled water. Order water, any diet soft drink, or coffee if you are on Phase 1.
