Stuffed potatoes with cheese sauce

Having some friends for a BBQ here is another great BBQing recipe. This one is great because you make most of it inside, you can make them ahead and just do the final step before serving. This recipe is also flexible, you can add any types of veggies that you like, add some herbs for extra flavour. This is a great recipe to serve with BBQ chicken or a stuffed pork roll, even better a big juicy burger. Try changing the cheese you put into the sauce maybe you would like to try blue cheese or gouda, umm... Try this recipe with just some bacon and the cheese sauce for your kids they'll love it...Experiment and have fun.

8 giant baking potatoes

3 small carrots, peeled

2 small zucchini

½ cup chopped mushrooms

¼ cup olive oil

2 small onions finely chopped

1 clove of garlic, crushed


2 tbsp butter

¼ cup all purpose flour

¾ cup whipping cream

¾ cup of milk

1 cup shredded cheddar cheese

2 tbsp chopped fresh chives

Pinch of salt and pepper

Bake potatoes and cool, cut in half if potatoes are fat if long cut a small bit off top to scoop out middle. Slice carrots, zucchini and mushroom into ½ inch sized pieces. Heat oil in a large pan and cook onions and garlic until soft or clear, add in other veg cooking on low- med heat. Cook until tender ( add water if needed to prevent sticking). Mash the potatoes that you scooped from shells, add in veg, cover and put aside.

To make sauce in a separate pan melt butter and add flour. Stir over low heat for 2-3 minutes, remove the pan from heat and add cream and milk. Continue to cook until sauce thickens; add half the cheese, with chives salt and pepper. Add sauce to veg. mix, mix well. Spoon filling back in to potatoes shells, over fill until all are stuffed. Place on preheated BBQ grill sprinkle remainder of cheese over each, let potatoes skin crisp and the cheese melt serve immediately. Goes great with chicken...

Note* add some chooped bacon to veg while cooking, "oh yeah that's good..."
