Sweet potato recipe: Simple, healthy and done in 5 minutes

Mike's Sweet Potato & Bean Power Lunch

Even you guys whose cooking repertoire consists of nuking frozen meals should be able to master this ultra-healthy dish that makes for an easy and nutrient-dense "power lunch." Sweet potatoes are delicious and one of nature's most powerful foods you can eat--full of fiber, minerals, and more than two days' worth of the RDA of Vitamin A.

Another power food, kidney beans are high in protein and fiber. A half-cup of Goya Red Beans and Sauce yields a whopping 7 grams of fiber, and that's in addition to the fiber benefits of the sweet potato when paired together. If you can't find the Red Beans, Goya Black Bean Soup works well too, or any beans with sauce that aren't sweetened (such as baked beans) will do the trick.

Here is my recipe, which is great for lunch, an easy dinner or even a mid-afternoon snack.

Mike's Sweet Potato & Bean Power Lunch

Serves 1


1 Medium Sweet Potato, rinsed and scrubbed to remove dirt

1/2 cup Goya Red Beans and Sauce

dollop of lowfat sour cream


Pierce potato with a fork a few times, then wrap in a paper towel and microwave for 3-4 minutes on high, or until tender. (if you have more time, bake at 375 degrees for 45 minutes). Split the potato and place in a microwave safe dish, then spoon beans on top. Microwave another 60 seconds or until beans are bubbling hot. Spoon sour cream on top and serve.

      I already know I will love this! I make something similar but think your recipe will surpass mine along with my taste buds!!!! Really love that its health,y too!
