ALready answered but here's my method:
- Slice the egg plant into half inch slices, can be length ways or sideways.
- Sprinkle them lightly with salt on both sides. Now let them rest for 20 minutes to draw out some of the excess moisture.
- Pat them dry with a napkin and brush on both sides with olive oil and season with black pepper.
- Broil under a very high heat for around 2 and a half minutes on each side
Result is very tasty broiled egg plant!
