Although I don't make hunting videos, I do like to watch them. I would suggest that you start by watching as many hunting videos as you can and look for things that you like and dislike about each one.
I would start by recording in HD quality. It is frustrating to watch videos on Youtube that are of poor quality. Next would be to work on editing skills. There is a lot of time spent waiting or stalking while hunting. A good hunting video should give an idea of how much work was put into it, but shouldn't show too much waiting around or walking around.
I would also make sure that you are recording audio with a quality microphone. If people are talking, you should be able to hear them clearly and hopefully you can tune out the wind so that it isn't distracting.
