Well like any other phones, the iPhone can tell when it has finished charging and you won't hurt the battery if you keep it plugged in after that. So enjoy it and charge it as often as you can!

Li-Ion batteries don't have a memory effect so you don't need to let it run down all the time. When the battery is low, charge it. It doesn't need to be fully discharged.
As often as you need, li-ion batterys are dynamic like that. Do a full drain down though once a month to make sure the iPhone remembers just how long the battery can last.
