Easy And Fast Recipes Ideas For When You Are In Vacation
Vacationing Not Cooking
If you are one of those families who like to travel to places that also offer kitchen spaces to be able to prepare the food yourself, I am sure you don't leave for your vacation thinking that you will spend half the day cooking instead of ... well... vacationing.
Reserving a vacation into a home with kitchen it can be the best choice when you have an extended family or you just want to make sure that everything your children or yourself put in your mouth are ingredients that you bought and controlled how much of what went into that food (sugar, salt, fat ... ).
A nearby supermarket or, even better, a marketplace will give you the chance to choose your ingredients and maybe buy local fresh products that will ensure your dishes will be healthy.
Breakfast needs to be very easy to do in order to let you get out the door early in the morning and catch as much of that sun as possible, when your vacation is in a warm place, or that morning snow when you are in the mountains.
A fast omelet will always be a great idea. All you have to do is crack some eggs, about two per adult and one per child, whisk them lightly or beat them really well and fry in a small amount of oil. You can add some vegetables diced finely to the omelet, or cut them in big chunks and set on another plate. Tomatoes, cucumbers, bell peppers, black and green olives, crispy bacon, cheese, and whatever you might want to add will help you get a really fast breakfast in almost no time at all. The ratio is one tomato and one cucumber per child and one and a half per adult, and a quarter of bell pepper per child and a half per adult. Excepting the cooking of the omelet and bacon all the other ones only take a few minutes to cut and breakfast is served.
You can replace the omelet with boiled or fried eggs, but I just think omelet is faster and easier on the body, especially if you are going to spend your day out in the sun.
You can make some pancakes because it take so little time to prepare the batter and the actual pancakes.
Recipe for nine pancakes:
- 1 cup all purpose flour,
- 3/4 cup buttermilk,
- 1 egg,
- 1 tablespoon sugar
- 2 tablespoons vegetable oil or melted butter
- 1 teaspoon baking powder
- a pinch of salt (about half of teaspoon)
Just combine the dry ingredients with the wet ones, don't bother sifting anything, fry them and add some fresh fruits next: strawberries, blueberries, raspberries, practically any berries you can find, or what other fruits you might like, add some powdered sugar or honey and that's your healthy, fast breakfast.
Another breakfast idea is to just have the vegetables, cheese, olives and bread, without anything else, in which case you increase the rations by half: two tomatoes per adult, and almost one and a half per child, and so on.
Muffins made from home, frozen and then heated up in the microwave or the oven at the vacation place are always a nice choice.
Breakfast can be fun and it can vary every day. To make things simpler just make a list from home with meals ideas and consult it. Remember that this should be a guide not a must. If the children or any of the adults want something else, or to eat out, then do that. It is a vacation, so have fun.
Sandwiches and snacks
Even if I don't think you shouldn't be eating anything else until lunch if you spend the day at the beach, if you feel the need to bring some sandwiches I recommend you make some with lettuce, cheese and ham because these will last best in heat.
The reason I say you should skip food until lunch when sunbathing is because you are not wasting any energy sitting by the pool and food will only bring calories that will add to your waist. I know that vacationing shouldn't be about calories, but I am sure you can have fun without eating just for fun or just because you have that food on you.
It will be best to have some healthy snacks like grapes, raw nuts and seeds or carrot sticks.
Ready For Lunch
In the middle of the day there is nothing like a fresh, easy and fast salad.
I love eating tuna salads in hot summer days and considering that you can buy a lot of things fresh from the market or already sliced from the supermarket makes the preparation so much easier.
Wash a whole lettuce and cut it in stripes think as the finger, cut in the same way half of iceberg salad, add a cup of boiled sweet corn, half of cup of chopped olives, 2 spring onions cut finely, 3 cornichon cucumbers (the small ones) sliced or half of Fabio cucumber (the long one) sliced, salt, pepper, olive oil and lemon juice all to taste, one can of tuna and two boiled eggs cut in quarters placed on top of the salad after you've mixed all the ingredients and set the taste.
It might sound like it is taking a lot of time, but it really doesn't. You can slice everything while the eggs are boiling, and by the time they are ready your salad will be ready too.
An even faster alternative will be to use store bought prepackaged salads to which you can add chopped olives and sweet corn and make a dressing out of a quarter cup of yogurt, half of teaspoon of mustard, salt and pepper and thin slices of Parmesan on top after you've mixed the salad and seasoned it.
You can play with these prepackaged salads and add anything you want to them, slices of red onion, cucumbers, olives and feta cheese and make it a Greek salad with olive oil and lemon juice, and whatever else comes through your mind.
Just don't buy those already made sauces from the store because they are real killers for your health and waist. You can make one so fast out of salt, black pepper, oil and lemon juice or vinegar. You don't need to mix it in another bowl and then add it to you salad, but add everything straight to the salad and mix the whole salad.
If you are not that hungry you can just have a slice of watermelon, or a bowl of fruits like apricots, cherries, strawberries, whatever you like.
This is again a moment that shouldn't take you longer making it than eating it. You should spend your time with your family, not cooking all evening long.
Make some homemade pizzas. You are after all in vacation and a little indulgence here and there is a must. Buy some pizza crust from the store, sprinkle some sweet corn, slices of onion, tomatoes, olives, mushrooms and ham and cover everything with cheese. Bake on high temperature until the cheese browns a little and that is it.
Again, I know it sounds like a lot of work, but it really isn't. You can buy almost anything already chopped from the store and all you have to do is put everything together and bake.
Buy some fried chicken and fries or baked potatoes from the store and add a salad next to it and you have a fast satiating dinner.
You can make some sauces from home, put them in plastic bags and freeze them and just take them with you in your vacation. Once you get there, place them in the freezer and get one bag each evening and make some pastas with sauce. All you will have to so is boil the pasta, drain them and cook them 4-5 minutes more with the sauce. There you have another fast delicious meal that won't keep you in the kitchen away from all the fun the rest of your family is having.
Time For Dessert
You can surely enjoy a piece of dessert in your vacation, and why not have something easy and fast to prepare.
A Panna Cotta is a simple to make dessert so delicious and refreshing. Boil together on medium heat 1/3 cup milk, two and a half cups of heavy cream and 3-4 tablespoons of sugar. In a separate bowl soak a sachet of gelatin and drain well. Add the gelatin to the boiled mix and cook for 30 seconds to 1 minute stirring constantly so it doesn't burn. Take away from heat and add the vanilla. Pour the mixture into individual portions, you get about 6 small glasses, or into a big one. Put in the freezer for about four hours to set well and serve it out of the cups, placed upside down on a plate with berries next.
It takes more to wait to refrigerate rather than to cook, so you can make it in the afternoon and eat it at dinner.
Fruits are always a great idea for dessert, alone or in combination with anything else like cakes, ice-cream or yogurt. Buy a Greek fat yogurt, add some honey and walnuts or honey and fruits and you get an incredible fast and delicious dessert.
Of course you can enjoy your vacation and buy some vanilla ice-cream that you can change yourself at the vacation home by either adding fruits, nuts or chocolate, or maybe all of them.
Enjoy Your Vacation
You have to remember you are on vacation and you should enjoy it. Having a kitchen can be at your advantage if you know how to use it. The kitchen is there to help you control what you put on your plate not keep you away from your family and the fun you are supposed to have.
Take advantage of everything you have there. If you have a mixer, a microwave, a blender, use all of them to cook faster. And, also visit the market and the store, depending on what you need to buy, and if you find already cut and packaged ingredients than buy and use them.
